First, you’ll add quinoa and chickpeas to the insert pot of the Instant Pot.

Whisk together water, lemon juice, garlic powder, black pepper, salt, oregano, olive oil, and red wine vinegar in a separate bowl.

Next you’ll pour mixture over the quinoa and chickpeas and add the red onions if using. Stir to combine.

Close lid and set the vent to the sealed position. Select a cook time of 1 minute at high pressure.
