Bisquick Chicken Tenders

Ingredients
  

  • 1 pound boneless skinless chicken breast tenderloins
  • 3/4 cup Bisquick baking mix
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon pepper
  • 1/4 teaspoon salt
  • 2 eggs

Instructions
 

  • Preheat oven to 450F and line a baking sheet with parchment paper. Set aside.
  • In a gallon-size zip-top bag, combine Bisquick, parmesan, garlic powder, paprika, pepper, and salt. Close bag and shake to combine. Open bag.
  • Add eggs to a shallow dish and whisk them together to "scramble" the eggs.
  • Working with one chicken tender at a time, dredge the chicken tender in the egg mixture to coat. Then add it to the zip-top bag. Repeat with one or two more chicken tenders (don't over-crowd the bag--I only add up to 3 tenders at a time).
  • Zip the bag close and shake the tenders. Then open the bag, remove the tenders, dredge them through the egg mixture once more, then shake them in the bag once more. You're essentially "double breading" them.
  • Place tenders on prepared baking sheet, then repeat the process with any remaining tenders.
  • Bake in preheated oven for 10 minutes, then flip the tenders over and bake for 5 more minutes, or until golden-brown and internal temperature reaches 165F.

Notes

  • Feel free to double this recipe if needed. The number of tenders will depend on how thinly the chicken is sliced. This served 4 in my family, but if you have hearty eaters, you may need more!
  • The Bisquick baking mix contains a little fat, which helps the crust to crisp up nicely. However, you can also give the tenders a spritz of oil spray before baking if you want.
