Cinnamon Sugar Drop Biscuits

Ingredients
  

For the Biscuits:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 1/2 sticks cold butter (12 Tbsp, grated)
  • 1 cup buttermilk see notes below

For the Cinnamon Sugar Topping:

  • 1 tablespoon melted butter
  • 1 tablespoon sugar
  • 1/2 teaspoon ground cinnamon

For the Glaze:

  • 1/2 cup confectioner's sugar
  • 2 tablespoons milk
  • 1/4 teaspoon vanilla extract

Instructions
 

  • Preheat oven to 450F. Prepare a baking sheet by lining with parchment paper or silicone baking mat.
  • In a medium mixing bowl, combine flour, baking powder, sugar, and salt, whisking together.
  • Using a pastry blender or two forks, cut grated butter into the flour mixture, until particles are about the size of peas or smaller.
  • Add in buttermilk, stirring gently to form a sticky dough (avoid overworking the dough).
  • Scoop out dough into 12 rounds, placing onto the baking sheet, leaving a couple of inches between each scoop.
  • In a small bowl, combine cinnamon and sugar for topping. Set aside.
  • Brush melted butter on the top of each round of biscuit dough, then sprinkle with cinnamon sugar mixture.
  • Bake for 12-14 minutes, until biscuits are turning golden brown on top and a toothpick inserted in the center comes out clean.
  • While biscuits are baking, prepare the glaze by whisking together the confectioner's sugar, milk, and vanilla extract until smooth.
  • Remove from oven and allow to cool slightly for a couple of minutes. Drizzle with glaze while warm.
  • Serve warm and enjoy!

Notes

If you don't have any buttermilk on hand, you can add 1.5 Tablespoons of white vinegar to a measuring cup, then add milk until you reach the 1 cup mark. Stir and let it stand for a few minutes while the milk "sours" into buttermilk.
