Kentucky Sawdust Pie

Sawdust pie is a sweet southern dessert reminiscent of pecan pie, but with graham crackers and coconut added to the filling. It's delicious with whipped cream and sliced bananas on top!

Ingredients
  

  • 1 pie crust
  • 1 cup sugar
  • 1/3 cup brown sugar
  • 4 eggs
  • 1/4 teaspoon salt
  • 5 ounces graham crackers, coarsely crushed (9 full size sheets, approx. 1 1/2 cups crushed)
  • 1 1/2 cups chopped pecans (toasted)
  • 1 1/2 cups sweetened shredded coconut
  • 3 tablespoons unsalted butter (melted)

For Garnish (Optional):

  • banana slices
  • whipped cream

Instructions
 

  • Preheat oven to 350F. Place pie crust in a 9.5-inch pie plate, pressing it into the bottom and up the sides of the dish. Flute the edges and set aside.
  • In a medium mixing bowl, whisk together sugar, brown sugar, vanilla, eggs, and salt until combined.
  • Stir in the crushed graham crackers, toasted pecans, coconut shreds, and melted butter, mixing until incorporated.
  • Pour filling mixture into the crust. Bake in preheated oven for about 30-35 minutes, or until top is browned but the center still jiggles slightly.
  • Remove from oven and let cool completely before slicing and serving.
  • When serving, garnish with banana slices and whipped cream, if desired.

Notes

  • To toast the pecans, I simply add them to a dry skillet over medium heat. I stir them frequently, letting them toast until they're fragrant and darker in color (about 10 minutes).
  • 5 ounces of graham crackers is one regular-size sleeve from a box, which contains 9 full-size sheets of graham crackers.
  • I recommend crushing the graham crackers into coarse pieces, rather than using a food processor to yield crumbs. This helps the texture of the pie be less dry.
  • Leftover pie should be covered and refrigerated.
