An easy, creamy chicken casserole is topped with buttery, crispy Ritz cracker pieces. This is a comfort food classic you can enjoy on its own, or serve it over a bed of rice or noodles.
5-6cupsPrecooked shredded chicken(approx 1 rotisserie chicken or 2 - 2 ½ pounds chicken breasts)

1cupSour cream
210.5-ounceCans of Cream of Chicken Soup
½cupChicken broth
1tspSalt
½tspBlack pepper
1tspGarlic powder
1tspOnion powder
2sleevesRitz Crackers (crushed)
½cupunsalted butter (melted)
Chopped green onions (optional; for garnish)
Instructions
Preheat the oven to 350 degrees. Spray 9x13 pan with non-stick cooking spray.
In a large mixing bowl, add the mayonnaise, sour cream, cream of chicken soup, and chicken broth, and stir to combine. Mix in salt, pepper, garlic powder, and onion powder.
Add shredded chicken, and stir well to ensure the chicken is properly coated with the sour cream mixture.
Spread chicken mixture into your prepared 9x13 casserole dish, and set aside.
In a separate bowl, pour melted butter over the crushed Ritz crackers. Stir until all butter has been absorbed.
Sprinkle the cracker mixture over the chicken base in an even layer. Bake for 25–30 minutes, or until the sauce is bubbly and the topping is a deep golden brown.
If desired, garnish with chopped green onions and serve!
Notes
Using a rotisserie chicken will save you lots of time, versus cooking and shredding chicken. It also adds a nice slow-roasted flavor. A rotisserie chicken typically yields 5-6 cups of meat, which is the perfect amount for this recipe. But you can certainly boil or bake chicken breasts and shred the chicken, if you prefer.
For the best crunch, don't pulverize the crackers into fine dust. Aim for larger coarse chunks to create those signature buttery nooks and crannies on top of the casserole.
If you are prepping this meal ahead of time, store the chicken mixture in the fridge, but keep the crackers and butter separate. Only add the topping immediately before the pan goes into the oven.
I prefer a ceramic or glass baking dish for casseroles like this. A ceramic or glass dish will provide more even heating for the creamy base compared to thin metal pans.
