Bisquick Strawberry Cobbler

Make use of spring and summer's bounty with this easy strawberry cobbler that's made with Bisquick baking mix. It showcases the ripe fruit perfectly, and it's super simple to whip up.

Ingredients
  

For the Filling:

  • 1 pound fresh strawberries
  • 1/3 cup granulated sugar
  • 2 tablespoons cornstarch
  • 2 tablespoons lemon juice

For the Cobbler Topping:

  • 1 cup Bisquick baking mix
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1/3 cup milk
  • 2 tablespoons granulated sugar, for dusting (optional)

Instructions
 

  • Preheat oven to 350F and grease a deep dish pie plate (or baking dish) with butter.
  • Prepare the filling by hulling and quartering the fresh strawberries. Add them to the prepared pie plate, followed by sugar, cornstarch, and lemon juice. Stir gently to combine, then let sit for about 10 minutes.
  • In another small mixing bowl, combine Bisquick baking mix, sugar, melted butter, and milk. Whisk until smooth.
  • Stir the strawberry mixture again, spreading it evenly across the bottom of the dish. Scoop rounds of the batter over the strawberry mixture.
  • If desired, sprinkle two additional tablespoons of sugar over the cobbler batter.
  • Bake for 35-40 minutes, or until the topping is light golden-brown and the filling is bubbly.
  • Remove from oven and let cool for at least 5-10 minutes to allow the filling to thicken a bit before serving. You can serve this warm or at room temperature. We love to top it with vanilla ice cream or whipped cream!

Notes

  • If you would like to have extra filling in the cobbler, you can double the ingredients for the filling (and keep the ingredients for the topping the same).
  • We love to serve this with vanilla ice cream or whipped cream.
  • Leftovers should be covered well and refrigerated.
  • If you don't have a deep dish pie plate, you can use an 8x8" baking dish, an iron skillet, or a 2-quart baking dish.
