Easy Bisquick Strawberry Cobbler

Ripe, juicy fruit really gets to shine in this easy strawberry cobbler made with Bisquick baking mix. It’s a handy shortcut that saves on time but doesn’t skimp on flavor!

Bisquick strawberry cobbler is a spring and summer showstopper that’s perfect for bringing to gatherings, holiday dinners, or cookouts. Nobody will ever guess you used Bisquick!

Ruby red, juicy strawberries are one of the hallmarks of spring and summer, and we love eating as many as we can this time of year.

We also happily include them in a lot of our baked goods during this season–in part because they’re delicious, and in part because they make everything beautiful!

What’s not to love about old-fashioned strawberry shortcake, sweet strawberry sandwich cookies, or homemade strawberry jam?

I’m also a sucker for fruit pies and cobblers, but I’m an even bigger fan of a good kitchen shortcut.

This Bisquick strawberry cobbler is super easy to throw together at the last minute, and it tastes amazing–but without a lot of effort!

It’s a perfect Easter dessert or a crowd-pleasing dessert to bring to a summer barbecue, and it only requires a few ingredients to whip it up.

We love to serve it “a la mode” with a scoop of vanilla ice cream–it’s one of life’s simple pleasures, if you ask me!

Shortcut Strawberry Cobbler

Many people know you can use Bisquick to make biscuits, but it’s so much more versatile than that!

I’ve made Bisquick brownies, Bisquick blueberry muffins, Bisquick chocolate chip cookies, and more. So it was a natural choice when I needed a simple shortcut for making a fruit cobbler.

I like to combine the baking mix with a little sugar, just so the topping is a bit sweeter than a biscuit would be, then add some butter and milk to make sure it’s nice and tender.

The filling is bursting with flavor, and it thickens up nicely, making it the perfect pairing for the cobbler crust.

How to Make Strawberry Cobbler with Bisquick

It’s easy to make this sweet treat.

Ingredients You’ll Need:

  • Fresh strawberries
  • Sugar
  • Cornstarch
  • Lemon juice
  • Bisquick baking mix
  • Butter
  • Milk

How to Make it:

Toss the berries. To start, you’ll combine sliced strawberries, sugar, cornstarch, and lemon juice in a prepared pie pan.

Toss them well to coat, then let them sit for several minutes, allowing the juices to release from the berries.

Prepare the topping. In a mixing bowl, combine the Bisquick, sugar, melted butter, and milk.

Whisk well until smooth.

Prep and bake. Scoop rounds of batter over the strawberry mixture.

If you’d like, you can sprinkle a couple tablespoons of sugar over the topping, just for a little sparkle and a hint of sweetness.

Then bake for about 25-40 minutes, until the filling is bubbly and the topping is golden-brown.

Serve. Remove from oven and let cool for a bit before serving, as the filling will thicken as it cools.

We like to serve it warm, topped with vanilla ice cream, but whipped cream would be a tasty addition, too!

Notes and Adaptations:

  • If you would like to have extra filling in the cobbler, you can double the ingredients for the filling (and keep the ingredients for the topping the same).
  • I recommend serving this with vanilla ice cream or whipped cream.
  • Leftovers should be covered well and refrigerated.
  • If you don’t have a deep dish pie plate, you can use an 8×8″ baking dish, an iron skillet, or a 2-quart baking dish.

Bisquick Strawberry Cobbler

Make use of spring and summer's bounty with this easy strawberry cobbler that's made with Bisquick baking mix. It showcases the ripe fruit perfectly, and it's super simple to whip up.

Ingredients
 

For the Filling:

  • 1 pound fresh strawberries
  • 1/3 cup granulated sugar
  • 2 tablespoons cornstarch
  • 2 tablespoons lemon juice

For the Cobbler Topping:

  • 1 cup Bisquick baking mix
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1/3 cup milk
  • 2 tablespoons granulated sugar, for dusting (optional)

Instructions

  • Preheat oven to 350F and grease a deep dish pie plate (or baking dish) with butter.
  • Prepare the filling by hulling and quartering the fresh strawberries. Add them to the prepared pie plate, followed by sugar, cornstarch, and lemon juice. Stir gently to combine, then let sit for about 10 minutes.
  • In another small mixing bowl, combine Bisquick baking mix, sugar, melted butter, and milk. Whisk until smooth.
  • Stir the strawberry mixture again, spreading it evenly across the bottom of the dish. Scoop rounds of the batter over the strawberry mixture.
  • If desired, sprinkle two additional tablespoons of sugar over the cobbler batter.
  • Bake for 35-40 minutes, or until the topping is light golden-brown and the filling is bubbly.
  • Remove from oven and let cool for at least 5-10 minutes to allow the filling to thicken a bit before serving. You can serve this warm or at room temperature. We love to top it with vanilla ice cream or whipped cream!
