Growing up, my family had blackberry bushes in our backyard. Every summer, my mom would give me a big mixing bowl and send me out into the sunshine to pick the berries that were ripe and ready to eat.

She’d take the bounty I’d gathered and make a homemade pie, which became one of my very favorite summer desserts.

Now, I carry on the tradition and make my deep dish blackberry pie whenever I have the time. But the reality is, there are days when I don’t have the extra time to make a pie crust from scratch.

That’s when cobblers can really shine! They have all the flavor of a homemade fruit pie, but without all of the effort.

This Bisquick blackberry cobbler is especially easy to make, because the topping is just a few basic ingredients stirred together.

The juicy sweetness of the blackberries is the star of the show, and the fluffy biscuit-like crust is the perfect finishing touch.

Shortcut Blackberry Cobbler

I wanted this recipe to be as quick and easy as possible, so I’ve kept it simple. In fact, it takes less than an hour from start to finish!

I didn’t want a bunch of dirty dishes to clean up afterward, so the filling ingredients are mixed together right in the baking dish. That means you only need one mixing bowl for making the topping!

Then it gets baked until the crust is lightly golden-brown and the filling is bubbly.

And when it’s served warm with a scoop of vanilla ice cream or dollop of whipped cream? Absolute perfection.

It’s the perfect solution when you need a last-minute dessert for a potluck dinner or summer BBQ!

How to Make Blackberry Cobbler with Bisquick

It’s really easy to make this sweet dessert.

Ingredients You’ll Need

  • Fresh blackberries
  • Sugar
  • Cornstarch
  • Fresh lemon juice
  • Bisquick baking mix
  • Milk
  • Butter

How to Make It:

Toss the berries. First, you’ll combine the berries, sugar, cornstarch, and lemon juice in a greased baking dish.

You can use a deep dish pie pan, a 9×9″ baking dish, a 9×13″ baking dish, a cast iron skillet, or other similar-sized casserole dish.

Mix the topping. Then, you’ll mix up the batter for the topping by combining the Bisquick, some sugar, milk, and melted butter.

Assemble and bake. Then, you’ll use a small cookie scoop or two spoons to scoop out rounds of batter. Drop the batter over the fruit mixture.

It doesn’t have to be perfect here–you’re just trying to place them somewhat evenly so there are no huge gaps.

Then bake it in a preheated oven until the topping is light golden-brown.

Let it cool for about 10 minutes before serving, which will allow the filling time to thicken up just a bit.

Bisquick Blackberry Cobbler

Making homemade blackberry cobbler with Bisquick is an easy way to enjoy the juicy sweetness of fresh berries, but without a lot of work or cleanup.

Ingredients
 

For the Filling:

  • 5 cups fresh blackberries (approx. two 12-ounce containers)
  • 1/2 cup sugar
  • 2 tablespoons cornstarch
  • 2 tablespoons fresh lemon juice

For the Topping:

  • 1 cup Bisquick baking mix
  • 1/4 cup sugar
  • 1/3 cup milk
  • 1/4 cup butter (melted)

Instructions

  • Preheat oven to 350F. Grease a 9×13" baking dish or deep dish pie pan.
  • Prepare filling by adding fresh blackberries, sugar, cornstarch, and lemon juice to the prepared baking dish. Toss together to coat the berries evenly.
  • In a medium mixing bowl, prepare topping batter by combining Bisquick baking mix, sugar, milk, and melted butter. Stir until well-incorporated.
  • Using a small cookie scoop or a tablespoon, scoop out rounds of batter and drop them over the berry mixture. They don't have to be spaced perfectly (cobblers are rustic!), but try to get them as even as possible so there are no huge gaps in between rounds of batter.
  • Bake in preheated oven for 35-40 minutes, or until filling is bubbly and the topping is lightly golden-brown.
  • Remove from oven and let the cobbler cool for about 10 minutes, which will allow the filling to thicken up a bit. Serve warm, topping with ice cream or whipped cream, if desired.
