Easy Bisquick Taco Casserole

Cheesy and flavorful taco casserole is a family favorite meal that’s filling and easy to make.

Try something different for Taco Tuesday and make this easy Bisquick taco casserole for an all-in-one dinner, complete with layers of beans, beef, and plenty of melty cheese.

When evening rolls around, the one question every mom dreads is, “What’s for dinner?”

That’s why it’s always a good idea to have a handful of quick and easy meal options up your sleeve, especially if they don’t require a bunch of ingredients.

You want things you can throw together at the last minute and still give your family a homemade dinner that costs way less than takeout.

This Bisquick taco casserole is one of those simple yet filling dishes that doesn’t take long to make, and it uses ingredients that are easy to keep on hand.

There are so many things you can make with Bisquick, so I keep a box of it in my pantry at all times. So if you keep some refried beans, Rotel, and taco seasoning stocked in your pantry, all you’ll need is the ground beef, cheese, and a little bit of milk.

If you follow a themed meal plan, this makes a great option for Taco Tuesday. Serve it on its own or add a salad or some chips and salsa on the side and you’re set!

How to Make Taco Casserole with Bisquick

It’s really easy to make this filling meal.

Ingredients You’ll Need

  • Ground Beef
  • Taco Seasoning
  • Diced Tomatoes and Chilies (Such as Rotel)
  • Bisquick Baking Mix
  • Refried Beans
  • Milk
  • Shredded Cheese

How to Make It:

Prepare the beef. First, you’ll brown the ground beef over medium-high heat. Drain off excess grease, then add taco seasoning and a can of Rotel to the beef.

Mix over medium heat until warmed through, then set aside.

Prepare the bean mixture. Then, you’ll add Bisquick, refried beans, and milk to a mixing bowl. Stir until everything is well-combined.

Spread the mixture into a greased 8×8-inch baking dish.

Layer and bake. Then, you’ll spread the beef mixture over the bean layer. Add the shredded cheese on top.

Cover tightly with foil and bake for about 25-30 minutes, removing the foil for the last 5 minutes of baking time.

Let it cool for about 10-15 minutes before serving. Enjoy!

Notes and Adaptations:

  • Feel free to garnish with your preferred toppings. Some suggestions include green onions, sour cream, black olives, sliced avocado, etc.
  • You can adjust the spice level of this dish by choosing your taco seasoning and Rotel accordingly. I use mild for both, but you can use medium or hot if preferred. You can also use pepper jack cheese for a little more heat.
  • You can substitute ground turkey for ground beef if desired.
  • Leftovers should be covered and refrigerated for up to 3-4 days.

Bisquick Taco Casserole

This easy taco bake makes a simple weeknight dinner that's full of flavor, protein, and plenty of melty cheese.

Ingredients
 

  • 1 pound ground beef
  • 1 ounce packet taco seasoning
  • 10 ounce can diced tomatoes and chilies (such as Rotel)
  • 1 cup Bisquick baking mix
  • 16 ounce can refried beans
  • 1/2 cup milk
  • 1 1/2 cups shredded cheese (such as Colby Jack or cheddar)

Instructions

  • Preheat oven to 375F. Grease an 8×8-inch baking dish and set aside.
  • Add ground beef to a skillet and cook over medium-high heat, breaking the beef apart as it cooks.
  • Drain excess grease and return beef to skillet. Add taco seasoning and Rotel. Stir to combine, heating over medium heat until warmed through. Remove from heat and set aside.
  • In a mixing bowl, combine Bisquick, refried beans, and milk. Stir well until incorporated, then spread the mixture into the prepared baking dish.
  • Add the beef and tomatoes, spreading them over the bean mixture, then top with shredded cheese.
  • Spray a piece of aluminum foil with nonstick spray, then cover the dish tightly with foil (with the sprayed side down, to prevent cheese from sticking to the foil).
  • Bake in preheated oven for about 25-30 minutes, removing the foil for the last 5 minutes.
  • Remove from oven and let cool for 10-15 minutes, then slice and serve, garnishing as desired.
