Easy Knorr Taco Rice Casserole
This cheesy Knorr taco rice bake combines seasoned rice, beef, beans, and plenty of cheese for a simple but hearty family meal.
Easy taco rice casserole is a great way to turn a handful of pantry staples into a filling meal the whole family will enjoy.

There are plenty of nights when I want something hearty for dinner, but I don’t want to deal with a long ingredient list (or a sink full of dishes). I’m sure you can relate!
This cheesy Knorr taco rice bake is perfect for those kinds of evenings. It’s filling, family-friendly, and most of the ingredients are pretty easy to keep on hand.
I like how the ground beef and black beans work together here. You get plenty of protein without needing a full pound of meat, which helps stretch your groceries a little further.
A packet of Knorr Taco Rice, a can of Rotel, and some taco seasoning make sure the dish has plenty of flavor.
But of course, the cheese is what really takes it up a notch. Shredded cheese melts over the rice as it bakes, and warm queso dip is spooned over the top once it comes out of the oven, so it feels like a restaurant-quality meal.

How to Make Taco Rice Casserole
It’s really easy to make this one-pan meal.
Ingredients You’ll Need
- Ground Beef
- Black Beans
- Knorr Taco Rice
- Rotel
- Taco Seasoning
- Water
- Shredded Cheese
- Queso Dip

How to Make It:

Cook and season the beef. First, you’ll brown the ground beef over medium-high heat, breaking it apart as it cooks.
Drain excess grease from the pan, if needed, then add the black beans, Rotel, taco seasoning, and water. Stir to combine.

Stir in rice. Then, you’ll stir in the taco rice, sprinkle shredded cheese on top of the mixture, then cover the pan with the lid (if you don’t have a lid, tightly cover it with aluminum foil).

Bake and serve. Then, you’ll transfer the covered pan to the oven. Bake the casserole for about 40 minutes.
Near the end of the cook time, warm up your queso dip according to the package instructions, so it will be easy to pour.
Remove pan from oven and take off the lid, then drizzle the hot queso over the top of the rice mixture.
Let it all cool for a few minutes, then serve and enjoy.

Notes and Adaptations:
- I use half a pound of ground beef, since it’s being bulked up with black beans. If you prefer more meat, feel free to use a full pound of beef.
- If you prefer to omit the queso topping, you can. You may want to add extra shredded cheese instead.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3-5 days.

Ingredients
- 1/2 pound ground beef
- 15 ounce can black beans (drained and rinsed)
- 5.4 ounce packet of Knorr Taco Rice
- 10 ounce can of Rotel
- 2 tablespoons taco seasoning (about half of a standard packet)
- 1 3/4 cup water
- 1 cup shredded cheese (such as Cheddar or Colby Jack)
- 1 1/4 cup queso dip (such as refrigerated Gordo's Cheese dip)
Instructions
- Preheat oven to 350F.
- Add ground beef to a large oven-safe skillet. Brown the ground beef over medium-high heat, breaking it apart as it cooks.
- Drain excess grease from the pan, if needed, then add the black beans, taco rice, Rotel, taco seasoning, and water. Stir to combine.
- Sprinkle shredded cheese on top of the mixture, then cover the pan with the lid (if you don't have a lid, tightly cover it with aluminum foil).
