Easy Bisquick Cherry Cobbler

A simple cobbler made with frozen cherries and Bisquick baking mix, this is one of those shortcut recipes you’ll want to keep on hand for guests or last-minute gatherings.

Easy Bisquick cherry cobbler combines a jammy filling with a buttery crumble topping that crisps up perfectly. Serve warm with a scoop of vanilla ice cream or whipped cream on top!

Fruit cobblers are one of my absolute favorite desserts, especially during the summer months when fresh fruit is plentiful.

The bubbly fruit filling paired with a sweet topping is the perfect way to use up produce before it goes bad.

But when I don’t have fresh fruit on hand, or if the fruit I need isn’t in season, I often turned to canned or frozen fruit.

This Bisquick cherry cobbler is one of those desserts that makes use of frozen cherries and Bisquick baking mix, so it’s easy to keep the ingredients on hand at all times of the year.

It’s great to bring to a potluck dinner or to whip up at the last minute when you have company coming over.

Making Crumble Topping with Bisquick

Often when I’m making Bisquick cobblers, I prepare a topping that I scoop onto the filling, giving it a softer crust, more like a tender, cakey biscuit.

But for this recipe, I wanted it to be more like a cherry crumble, with a crispier topping.

So I mixed some Bisquick with sugar and melted butter, plus a little almond extract (almond flavor goes so well with cherry!).

This baked up into a buttery topping with crisp bits throughout–just the right contrast to the dark sweet cherry filling.

It’s one of the best things you can make with Bisquick!

How to Make Bisquick Cherry Cobbler

It’s really easy to whip up this dessert.

Ingredients You’ll Need

  • Frozen dark sweet cherries
  • Sugar
  • Cornstarch
  • Lemon juice
  • Bisquick
  • Butter
  • Almond extract (optional)

How to Make It:

Prep the filling. First, you’ll combine frozen cherries (no need to thaw them), sugar, cornstarch, and lemon juice in a greased baking dish.

Toss to coat the cherries in the mixture.

Prepare the topping. Then, you’ll mix some Bisquick, sugar, melted butter, and almond extract in a mixing bowl. It will form a crumbly sort of dough.

Top and bake. Then, you’ll sprinkle that crumble topping over the cherry mixture. Pop the dish into the oven and bake for about an hour, or until the filling is bubbly and the topping is golden-brown.

Let it cool for at least 10-15 minutes before serving. Add a scoop of ice cream or whipped cream, if you’d like!

Notes and Adaptations:

  • The almond extract is optional. The flavor pairs really well with cherries, but you can skip it if you don’t have any on hand.
  • Leftovers can be covered well and refrigerated for up to 2-3 days.
  • You can substitute pitted fresh dark sweet cherries instead of frozen, if preferred.

Bisquick Cherry Cobbler

This easy cherry cobbler is made with frozen cherries and Bisquick, creating a jammy fruit filling with a crumbly topping that's just so good!

Ingredients
 

For the Filling:

  • 32 ounces frozen pitted dark sweet cherries (approx. 6 cups, or two 16-oz packages)
  • 1/4 cup sugar
  • 2 tablespoons cornstarch
  • 2 tablespoons fresh lemon juice

For the Topping:

  • 1 cup Bisquick baking mix
  • 1/2 cup sugar
  • 1/4 cup unsalted butter (melted)
  • 1/2 teaspoon almond extract (optional)

Instructions

  • Preheat oven to 350F. Grease a 9×13-inch baking dish.
  • To the baking dish, add frozen cherries. Sprinkle the sugar, cornstarch, and lemon juice over the cherries, then stir together to coat the cherries with the mixture.
  • Prepare the topping by combining the Bisquick, sugar, melted butter, and almond extract (if using) in a medium mixing bowl. Stir together until a slightly crumbly dough has formed and there are no dry patches in the dough. I usually start mixing with a spoon and finish with my fingers.
  • Sprinkle the pieces of dough evenly over the top of the cherry mixture.
  • Transfer to preheated oven and bake for about 60 minutes, or until the filling is bubbly and the topping is golden-brown.
  • Remove from oven and let cool for about 10-15 minutes before serving. This will allow the filling to thicken a bit. Then serve and enjoy!

Notes

  • The almond extract is optional, but the flavor pairs well with cherries, so I like to add it. If you don’t have any on hand, you can omit it or use vanilla extract instead.
  • We like to serve this cobbler warm, topped with either vanilla ice cream or whipped cream. 
  • Leftovers can be covered well and refrigerated for up to 2-3 days.
  • You can substitute fresh pitted cherries for the frozen cherries if preferred.
