- Bisquick baking mix
- Granulated Sugar
- Ground Cinnamon
- Ground Nutmeg
- Egg
- Sour Cream
- Vegetable Oil
- Vanilla Extract
- Applesauce
For the Streusel Topping:
- Granulated Sugar
- Brown Sugar
- All-purpose Flour
- Ground Cinnamon
- Vegetable Oil
How to Make It:

Mix the dry ingredients. First, you’ll combine Bisquick baking mix, sugar, cinnamon, and nutmeg on low speed in the bowl of a stand mixer (or in a large bowl if you’re mixing by hand).
Prepare the batter. Next, you’ll add egg, sour cream, vegetable oil, vanilla extract, and applesauce. Mix on low speed just until incorporated.
Prepare the streusel topping. Next you’ll whisk together granulated sugar, brown sugar, flour, and cinnamon in a separate small bowl.
Add vegetable oil to the cinnamon sugar mixture and stir until it has the consistency of wet sand (I find a small spatula or my fingers work best to mix together).
Prepare the muffins. Next, you’ll scoop batter out into a muffin pan that’s been sprayed with cooking spray, filling each well no more than 2/3 full.
I like to use a cookie scoop to divide the batter, but you can also use a spoon or a small measuring cup for scooping.
Sprinkle streusel topping evenly over the muffin batter.
Bake and serve. Last, you’ll bake for 17-19 minutes, or until the tops are golden brown and a toothpick inserted in the center of a muffin comes out clean.
You can serve the muffins warm or allow to cool before serving.
Notes and Adaptations:
- The streusel topping is optional, but I highly recommend it! It adds some extra sweetness and a hint of crunch to the muffins.
- Leftover muffins can be stored in an airtight container at room temperature.
- You can freeze the muffins by allowing them to cool completely, then wrapping well with plastic wrap (I like to wrap muffins individually and place them in a large zip-top bag or other freezer-safe container, so I can easily pull out how many I need).
- Feel free to use homemade Bisquick mix if you’d prefer.
