These cake mix cookies are perfect for the holidays! Whether you're making Christmas cutout cookies or rolled cookies in sprinkles for other special days, these are soft, sweet, and super easy to make. Change up the colors and shapes for different holidays throughout the year!

Instructions
Preheat oven to 350F and line a baking sheet with parchment paper or a silicone mat.
In the bowl of a stand mixer fitted with the paddle attachment (or in a large mixing bowl with an electric hand mixer), combine cake mix, flour, eggs, oil, vanilla extract, and almond extract. Mix on low speed until ingredients are combined and a soft dough forms.
To make cutout cookies, place the dough between two sheets of wax paper or parchment paper and roll out to about 1/4-inch thickness. Lightly dust cookie cutters with flour and cut into shapes, re-rolling any scraps to cut more cookies. Add sprinkles or sanding sugar to cut cookies, if desired.
To make round cookies, scoop dough out by rounded tablespoon and roll into a ball. If desired, roll in sprinkles or sanding sugar.
Place cookies on prepared baking sheet, leaving 1-2 inches in between them. Bake in preheated oven for 8-10 minutes, or until the edges are just beginning to turn golden.
Remove from oven and let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely (or enjoy warm, if preferred).
Notes
I used white cake mix in the cookies that are pictured above. Yellow cake mix will change the color slightly.
Leftover cookies should be stored in an airtight container at room temperature for 3-5 days.
