1 1/2poundsboneless, skinless chicken breasts (2 large chicken breasts)
1/4 - 1/2cupdiced onion (optional)
10.5ouncecan cream of chicken soup (or homemade--see notes below)
1/4cupsour cream
1teaspoondried parsley
1/2teaspoongarlic powder
1/4teaspoonblack pepper
1/3cupwater
6ouncedry stuffing mix (I used Stove Top Chicken variety)
1/4cupunsalted butter (melted)
Instructions
Add chicken breasts to the bottom of the slow cooker. If desired, you can cut the breasts in half first, or leave them whole and cut them afterwards (I ususally cut them after cooking).
If using, sprinkle the diced onion over the chicken breasts.
In a small mixing bowl, combine cream of chicken soup, sour cream, parsley, garlic powder, black pepper, and water. Whisk well to combine, then pour this over the chicken breasts.
In a separate mixing bowl, combine the contents of the box of stuffing mix with melted butter. Stir to toss them together until the stuffing mixture is coated with the butter.
Sprinkle the stuffing mixture over the top of the chicken and soup mixture.
Close the lid on the slow cooker and cook on high for 3-4 hours or on low for 5-6 hours (internal temperature of the chicken should be at least 165F). Then serve and enjoy!
