In addition to being one of my favorite Thanksgiving side dishes, I’ve been known to cook a box of stuffing for my lunch or to go along with whatever meat I’m cooking for dinner.
I love finding ways to enjoy it outside of the holiday season, and this Crock Pot chicken and stuffing casserole is a delicious option.
It has all the flavors of a holiday dinner but without the fuss of roasting a whole turkey. Just layer everything in the slow cooker, turn it on, and let it do the work while you go about your day.
The chicken comes out tender and juicy, the stuffing has that perfect mix of crunchy edges and soft bites, and the creamy sauce serves as a gravy in this hearty, comforting dish.

What to Serve With Crockpot Chicken Dinner with Stuffing
I love pairing slow cooker chicken and stuffing casserole with classic sides.
Creamy mashed potatoes are the perfect choice because they go so well with poultry and stuffing. When I’m short on time, I make these quick and easy Instant Pot mashed potatoes.
To keep things balanced, I like to add a simple vegetable side, and green beans are always a winner at my table. These pressure cooker green beans are easy, flavorful, and ready in minutes.
If you have a can of cranberry sauce in the pantry, it adds a little sweet tartness that balances everything out, making your chicken and stuffing feel like a cozy holiday meal!

How to Make Slow Cooker Chicken and Stuffing Casserole
It’s really easy to make this classic comfort food.
Ingredients You’ll Need
- Chicken Breasts
- Cream Of Chicken Soup
- Sour Cream
- Dried Parsley
- Garlic Powder
- Black Pepper
- Water
- Diced Onion (optional)
- Stuffing Mix
- Unsalted Butter

How to Make It:

Layer the chicken and gravy mixture. First, you’ll add chicken breasts to the bottom of the slow cooker. You can cut the breasts in half first, or leave them whole and cut them after cooking.
If you’re using onions, go ahead and sprinkle them over the chicken breasts.
In a small mixing bowl, combine cream of chicken soup, sour cream, parsley, garlic powder, black pepper, and water.
Whisk those ingredients together, then pour the mixture over the chicken breasts. This mixture is what becomes the sauce of the casserole.

Prepare the stuffing. Then, you’ll combine the contents of the box of stuffing mix with melted butter.
Stir or toss them together until the stuffing mixture is coated with the butter.

Layer and cook. Then, you’ll sprinkle the stuffing mixture over the top of the chicken and soup mixture.
Close the lid on the slow cooker and cook on high for 3-4 hours or on low for 5-6 hours (internal temperature of the chicken should be at least 165F).
Then serve and enjoy!

Notes and Adaptations:
- If you prefer, you can use homemade cream of chicken soup instead of canned soup.
- We like to serve this alongside mashed potatoes and green beans (and a little cranberry sauce if I happen to have it!).

Easy Crockpot Chicken and Stuffing
Ingredients
- 1 1/2 pounds boneless, skinless chicken breasts (2 large chicken breasts)
- 1/4 – 1/2 cup diced onion (optional)
- 10.5 ounce can cream of chicken soup (or homemade–see notes below)
- 1/4 cup sour cream
- 1 teaspoon dried parsley
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1/3 cup water
- 6 ounce dry stuffing mix (I used Stove Top Chicken variety)
- 1/4 cup unsalted butter (melted)
Instructions
