These chocolate cake bars are chock full of Halloween Oreos and festive sprinkles, making them a deliciously spooky dessert for your Halloween gatherings this year.
Preheat oven to 350F and spray an 8x8-inch baking dish with nonstick spray.
Chop 9 of the Oreo cookies. Sprinkle the pieces evenly over the bottom of the prepared baking dish. Set aside.
In the bowl of a stand mixer fitted with the paddle attachment (or in a large mixing bowl with an electric hand mixer), combine cake mix, milk, oil, and egg. Mix on low-medium speed until fully incorporated (batter will be thick).
Add chocolate chips, mixing to incorporate.
Spread the batter evenly over the Oreo pieces in the baking dish (I spray my hands with nonstick spray and use my fingers to press the batter into the pan).
Chop the remaining 9 Oreo cookies and sprinkle the pieces over the top of the batter. Then add the Halloween sprinkles over the top. Use your fingers to gently press the Oreo pieces into the batter.
Bake in preheated oven for about 25-35 minutes, or until a toothpick inserted in the center comes out mostly clean.
Remove from oven and let cool completely before slicing and serving.
Notes
Because these are pretty rich, I typically cut them into smaller squares and get about 12 squares from one pan. You can cut them larger or smaller.
Leftovers can be covered and stored at room temperature.
