Equipment

Ingredients

  • 3 teaspoons olive oil
  • 2 teaspoons Old Bay seasoning
  • 1/2 teaspoon salt (plus more to taste, if desired)
  • 1 cup raw pumpkin seeds

Instructions

  • Preheat oven to 375F and line a baking sheet with parchment paper.
  • In a small mixing bowl, combine olive oil, Old Bay seasoning, salt, and pumpkin seeds. Stir to coat well.
  • Transfer the seeds to the prepared baking sheet, spreading them evenly across the sheet. Give the seeds another sprinkling of salt, if desired.
  • Bake in preheated oven to 10-15 minutes, stirring after each 5-minute increment. Bake until they're lightly golden-brown.
  • Remove from oven and let cool on the baking sheet before serving.

Notes

  • Make sure your pumpkin seeds are dry before mixing with seasonings. If you scooped them from a pumpkin and rinsed the pulp off, towel dry or air dry them well, or pop them in the oven at a low temperature for a few minutes to dry them. You can also buy raw pumpkin seeds online.
  • Feel free to add more salt after the seeds have finished roasting, if you prefer them a little saltier.
  • Leftover seeds can be stored in an airtight container at room temperature.
