Old Bay has been a pantry staple for generations, and for good reason—it’s the perfect balance of salty, savory, and just a little spicy.
When you sprinkle it over pumpkin seeds and roast them until golden and crunchy, the bold seasoning clings to the seeds, making them the kind of treat that’s impossible to stop munching on.
I love how versatile Old Bay is, and using it on pumpkin seeds really shows off just how well it pairs with more than just seafood.

Season and bake the pumpkin seeds. First, you’ll combine olive oil, Old Bay seasoning, salt, and pumpkin seeds. Stir to coat well.
Then you’ll transfer the seeds to the prepared baking sheet, spreading them evenly across the sheet.
Give the seeds another sprinkling of salt, if desired. Bake in preheated oven to 10-15 minutes, stirring after each 5-minute increment.
Once they’re lightly golden-brown, they’re ready!

Notes and Adaptations:
- Make sure your pumpkin seeds are dry before mixing with seasonings. If you scooped them from a pumpkin and rinsed the pulp off, towel dry or air dry them well, or pop them in the oven at a low temperature for a few minutes to dry them. You can also buy raw pumpkin seeds online.
- Feel free to add more salt after the seeds have finished roasting, if you prefer them a little saltier.
- Leftover seeds can be stored in an airtight container at room temperature.
