I love how versatile Old Bay is, and using it on pumpkin seeds really shows off just how well it pairs with more than just seafood.

I even use it to make Old Bay Boiled Peanuts!

Notes and Adaptations:

  • Make sure your pumpkin seeds are dry before mixing with seasonings. If you scooped them from a pumpkin and rinsed the pulp off, towel dry or air dry them well, or pop them in the oven at a low temperature for a few minutes to dry them. You can also buy raw pumpkin seeds online.
  • Feel free to add more salt after the seeds have finished roasting, if you prefer them a little saltier.
  • Leftover seeds can be stored in an airtight container at room temperature.
