Za’atar seasoning is one of those multi-purpose blends that has an earthy flavor that’s just unforgettable. It’s a Middle Eastern blend of herbs, spices, and sesame seeds that quickly becomes one of those seasonings you’ll want to sprinkle on everything.
So when fall rolls around and you have a pile of fresh pumpkin seeds from carving, it’s the perfect opportunity to roast za’atar seasoned pumpkin seeds for a fun twist on the classic snack.
We’ve always loved pumpkin seeds, especially when they’re roasted until perfectly crunchy, but sometimes it’s fun to change up the usual salt or garlic powder routine.
Using za’atar turned out to be such a simple way to bring a unique flavor to an old classic. The seasoning clings to each seed, toasting beautifully in the oven, making an easy but tasty snack.

Pumpkin Seed Flavor Ideas
As much as we enjoy regular salted pumpkin seeds, sometimes it’s fun to change things up a bit.
Since we enjoy Old Bay pumpkin seeds, I figured the earthy, herby flavor of roasted pumpkin seeds with za’atar seasoning would be a good bet as well, and it was!
When making this variety with za’atar seasoning, be sure to check the salt content of your spice blend. Some brands don’t contain much (if any) salt, which will affect how much salt you add to the seeds.
If you prefer sweeter flavor varieties, try maple bourbon pumpkin seeds (one of my personal favorites!) or Biscoff candied pumpkin seeds.

How to Make Za’atar Seasoned Pumpkin Seeds
It’s really easy to make a batch of these seeds.
Ingredients You’ll Need
- Olive Oil
- Za’atar Seasoning Blend
- Salt
- Raw Pumpkin Seeds
How to Make It:

Season and bake the seeds. First, you’ll combine olive oil, za’atar seasoning, salt, and pumpkin seeds. Stir to coat well.
Transfer seeds to the prepared baking sheet, spreading them out evenly. If desired, give them another sprinkling of salt.
Then you’ll bake in a preheated oven for 10-15 minutes, stirring the seeds after each 5-minute increment. Bake until they’re light golden-brown.
Give them a taste and see if they need any more salt and, if so, sprinkle some on while they’re still warm.
Enjoy them warm or let them cool completely first–it’s up to you!

Notes and Adaptations:
- Make sure your pumpkin seeds are totally dry before mixing with the seasonings. If you’re scooping your own pumpkin seeds, rinse them well of any pulp, then towel dry or allow them to air dry. You can also transfer them to the oven at a low temperature to dry for a few minutes. Alternatively, you can buy raw pumpkin seeds online that are ready to go!
- The amount of salt needed will depend on your personal preference and the amount of salt (if any) in your za’atar seasoning blend. I start with 1/2 teaspoon, then sprinkle a bit more salt on the seeds in the pan before roasting. After roasting, you can add more salt if needed.

Ingredients
- 1 tablespoon olive oil
- 2 teaspoons za'atar seasoning blend
- 1/2 teaspoon salt (plus more to taste, if desired)
- 1 cup raw pumpkin seeds
Instructions
- Preheat oven to 375F and line a baking sheet with parchment paper.
- In a small mixing bowl, combine olive oil, za'atar seasoning, salt, and pumpkin seeds. Stir to coat well.
- Transfer seeds to prepared baking sheet, spreading them out evenly. If desired, give them another sprinkling of salt.
- Bake in preheated oven for 10-15 minutes, stirring the seeds after each 5-minute increment. Bake until they're light golden-brown.
- Remove from oven and let cool on the baking sheet. If needed, you can add more salt to taste at this point, depending on your preference.
