Peach Cobbler Dump Cake

This easy peach cobbler dump cake is made with canned peaches and boxed cake mix, so it's a simple but delicious dessert you can whip up at the last minute!

Equipment

Ingredients
  

  • 3 15-ounce cans of sliced peaches in juice
  • ¼ cup + 2 tablespoons light brown sugar
  • 1 tablespoon cornstarch
  • 2 teaspoons vanilla extract
  • ½ teaspoon salt
  • 15.25 ounce coconut cake box mix
  • 1 cup butter (2 sticks, cut into thin slices about 1/4" thick)

Instructions
 

  • Grease a 9x13" baking dish and preheat oven at 350F.
  • Mix together peaches (with their liquid), brown sugar, cornstarch, vanilla, and salt. Spread into the bottom of a greased 9x13 pan.
  • Sprinkle dry cake mix evenly over the top of the fruit mixture and evenly distribute butter slices over top.
  • Bake for 55 - 60 minutes until the filling is bubbling and the top is golden brown.
  • Let stand for 10-15 minutes. Serve warm, topping with vanilla ice cream or whipped cream, if desired.

Notes

  • If you can't find coconut cake mix or prefer another variety, you can use yellow cake mix or white cake mix instead.
  • Cover leftovers and store in the refrigerator for up to 3-5 days.
  • For a little extra crunch, feel free to add chopped pecans to the top of the cake mix layer before placing the butter slices.
  • Feel free to add 3/4 teaspoon ground cinnamon to the peach mixture if you'd like.
