How to Make Pumpkin No Bake Cookies

This no bake cookie recipe is really easy to make with simple ingredients. Perfect for this time of year!

Ingredients You’ll Need:

  • Unsalted Butter
  • Granulated Sugar
  • Pumpkin Pie Spice
  • Salt
  • Milk
  • Vanilla Extract
  • Pumpkin Puree (not pumpkin pie filling)
  • Old-Fashioned Oats

How to Make It:

Boil the sugar mixture. First, you’ll combine butter, granulated sugar, pumpkin pie spice, salt, milk, and vanilla in a medium saucepan.

Cook over medium-high heat, stirring occasionally, until the mixture begins to boil. Continue to cook for 2 minutes, stirring constantly, then turn off the heat.

Add the pumpkin. Next, you’ll add pumpkin puree to the hot mixture and stir to combine.

Shape the cookies. Last, you’ll add oats to the pumpkin mixture, stirring until completely coated.

Scoop mixture out by rounded tablespoon (or you can use a small cookie scoop) onto a baking sheet lined with wax paper or parchment paper.

Use damp fingers to slightly flatten the cookie balls, if desired.

Notes and Adaptations:

  • The cookies are less sticky (and easier to handle) once they’ve cooled completely.
  • Store leftover cookies in the refrigerator in an airtight container.
  • I have only tested this recipe with old-fashioned oats, so I can’t say for sure if quick oats would work just as well.
  • You could substitute brown sugar for the white sugar if preferred.

Ingredients

  • 1/4 cup unsalted butter
  • 1 cup granulated sugar
  • 1/2 teaspoon pumpkin pie spice
  • 1/8 teaspoon salt
  • 1/4 cup milk
  • 1/2 teaspoon vanilla extract
  • 1/3 cup pumpkin puree
  • 2 cups old-fashioned oats

Instructions

  1. Line a baking sheet with waxed paper or parchment paper and set aside.
  2. In a medium saucepan, combine butter, granulated sugar, pumpkin pie spice, salt, milk, and vanilla.
  3. Cook over medium-high heat, stirring occasionally, until the mixture begins to boil. Continue to cook for 2 minutes, stirring constantly, then turn off heat.
  4. Add pumpkin puree to the hot mixture and stir to combine.
  5. Add oats to the mixture, stirring until completely coated.
  6. Scoop mixture out by rounded tablespoon (or you can use a small cookie scoop) onto lined baking sheet. Use moist fingers to slightly flatten the cookie balls, if desired.
  7. Allow to cool completely (can transfer to refrigerator to speed up the cooling process, if desired) before serving.

  1. I got this exact recipe and amounts from a news website but in the directions it said to cook til the sugar was dissolved is all. So I made them in the microwave. It wasn’t thick enough so I added more oatmeal and a little flour. Just wondered your thoughts. No microwave and should’ve cooked on the stove?? They are kind of blah….

      Hi Marva! Boiling the mixture on the stove helps to thicken the sugar mixture into more of a syrup, giving it sort of a caramel-like taste and texture. If you try it again, I’d skip the microwave and use the stove top. You could also add some additional spice next time, if you think it needs a bit more. I hope that helps! 🙂
