Can You Make Chocolate Chip Cookies with Vegetable Oil?
When it comes to cookies, most people prefer cookies that are a bit soft, tender and a little flaky.
Butter is the backbone of a cookie’s texture but also contributes to the rise (fluffiness) and flavor. Making chocolate chip cookies without butter might sound like a disaster waiting to happen.
While your cookies won’t have that yummy buttery flavor, chocolate chip cookies with vegetable oil will be incredibly moist and delicious.
Vegetable oil is the perfect substitute when you are all out of butter or want to reduce the amount of saturated fat in your diet.
What Type of Vegetable Oil to Use in Cookies
When it comes to baking, not all oils are created equal. Canola oil or vegetable oil are the most common oils in baking, but the key is selecting a light, neutral flavored oil.
This isn’t the place to break out your extra virgin olive oil, as that flavor would easily overwhelm the cookies.
In addition to canola or vegetable oil, coconut oil, grapeseed oil, avocado oil and sunflower oil are fine choices, although each will slightly alter the final flavor of the cookies.

Prepare the equipment. First, preheat the oven to 350F and line baking sheets with parchment paper or a silicone baking mat.
Mix the wet ingredients. Next, in the bowl of a stand mixer fitted with a paddle attachment (or in a large mixing bowl with a handheld electric mixer), combine brown sugar, white sugar, and vegetable oil.
Beat together until fully incorporated.

Add remaining wet ingredients. Add in the eggs and vanilla extract, mixing well to combine.

Add the flour mixture. Then, you’ll whisk together flour, baking soda, and salt. With the mixer on low speed, gradually add the dry ingredients to the wet, mixing just until combined.

Mix-in chips. Add the chocolate chips and mix just until incorporated.

Bake the cookies. Last, you’ll scoop the dough into balls and place the cookie dough balls 2-inches apart on prepared cookie sheet.
Bake for 10 minutes, until lightly crispy edges are beginning to turn golden brown and the center of the top of the cookies still looks ever-so-slightly wet.

Remove from oven and allow cookies to cool completely on the baking sheet (they will continue to cook a little bit on the hot pans).
Serve and enjoy!

Notes and Adaptations:
- Store leftover cookies in an airtight container at room temperature for up to one week.
- Allowing cookies to be very slightly underbaked will produce more chewy cookies.
