Mix the wet ingredients. First, you’ll combine vegetable oil and sugar in a mixer on low speed to combine.

Add eggs and vanilla extract, mixing to incorporate.

Add the fruit. Next, you’ll add diced pears and mashed overripe banana puree, mixing on low speed until combined.

Prepare the batter. Next, you’ll whisk together flour, baking soda, salt, cinnamon, and nutmeg.

With the mixer on low speed, add about half of the flour mixture. Mix just until combined.
Add sour cream to the batter, mixing until incorporated.
Add the remaining dry ingredients, mixing with the electric mixer on low speed just until combined.

Bake the cake. Then, you’ll pour batter into prepared pan, smoothing it out evenly as needed.
Bake in preheated oven for about 60 minutes, or until a toothpick inserted in the center of the cake comes out clean.

Serve. Last, you’ll let cool in the pan for about 10 minutes, then run a knife along the edge of the cake to loosen it from the pan.
Invert cake onto a serving plate and allow to cool completely. Dust with powdered sugar before serving, if desired.
