Easy Cheater Risotto

This recipe is often called a cheater risotto, and once you try it, you’ll understand why.

You get that same creamy, rich texture you’d expect from traditional risotto, but without standing at the stove stirring the whole time.

It’s essentially parmesan rice made with cream of chicken soup. Since the rice cooks right in the broth and soup mixture, it soaks up all that flavor as it simmers, and the result is a dish that feels a little more elevated than your typical rice side.

There’s no guesswork, no constant attention, and no special technique required!

How to Make Cream of Chicken Soup Rice

It’s really easy to make this simple dish.

Ingredients You’ll Need

  • Basmati Rice
  • Chicken Broth
  • Condensed Cream Of Chicken Soup
  • Parmesan Cheese
  • Ground Pepper

How to Make It:

Combine the ingredients. First, you’ll combine chicken broth and cream of chicken soup in a large skillet. Heat over medium heat, stirring well to eliminate any clumps of soup.

Add basmati rice to the mixture, stirring to combine, then increase heat to medium-high and bring to a boil.

Cover and cook. Then, you’ll cover the pan and reduce heat to low, allowing it to simmer for about 10-12 minutes.

Remove pan from heat and remove the lid. Add parmesan cheese, stirring until combined and melted. If you’d like, give it a sprinkle of black pepper.

Cool and serve. Then, you’ll let the rice cool for about 5 minutes, then serve and enjoy!

This "souper" rice is like a cheater risotto, creating a creamy rice side dish with just four simple ingredients.

Ingredients
 

  • 1 cup basmati rice
  • 14.5 ounce can of chicken broth
  • 10.75 ounce can of condensed cream of chicken soup (or cream of celery or mushroom)
  • 1/4 cup freshly grated parmesan cheese
  • ground pepper (optional, to taste)
