When you’ve offered to bring dessert but don’t have an afternoon to spend baking, it helps to have a cake recipe that comes together easily.

This lemon pineapple cake takes just a few minutes to get into the oven, and you don’t have to worry about stacking layers or making homemade frosting.

The lemon gives it a bright citrus flavor, while the pineapple adds sweetness and keeps the cake nice and moist. A fluffy whipped topping finishes it off without the thick layer of icing you’d find on a traditional frosted cake.

It’s especially good served cold when you want something sweet after a cookout or a big Sunday lunch.

Plus, you can bake this cake the day before, then keep it covered in the refrigerator once it’s cooled and topped. That leaves one less thing to do when everyone’s ready to eat!

It’s an easy cake to take along to a church supper or family gathering. A 9×13-inch pan gives you plenty of slices to share, and you can transport it right in the pan.

Bake the cake. Then, you’ll pour the batter into a greased 9×13-inch pan. Transfer the pan to a preheated oven and bake for 35-40 minutes, or until a toothpick inserted in the center of the cake comes out clean.

Remove the pan from the oven and let the cake cool completely. Once the cake is cooled to room temperature, spread a nice layer of Cool Whip evenly over the cake.
