When it’s cold or rainy (or snowing!), I crave comfort food. Sometimes I want chicken and dumplings, or a bowl of Appalachian soup beans, or a “meat and potatoes” kind of dinner.
Smothered sausage and potatoes is a classic Southern comfort dish that is so easy to make with pantry ingredients that you probably have on hand.
This is one of those meals that I keep the ingredients for in my pantry and freezer. It’s the kind of meal that warms you from the inside out.
You’ve probably seen smoked sausage and potatoes on the menu at your favorite local diner. It’s a common plate lunch favorite because it is flavorful and filling and comes together in just a few minutes.
Plus, smoked sausage and potatoes is very budget-friendly and can easily be adapted to feed a crowd!
A plate piled high with a generous helping of sliced potatoes and sausage, served alongside some of delicious Instant Pot canned green beans and a slice of doctored-up Jiffy cornbread will satisfy all the hungry eaters in your house.

Tips for Making Smothered Sausage and Potatoes
The best thing about this recipe is that it’s more of a method. You can make some simple swaps to fit what you have on hand. Here are a few of my favorite tips.
- Swap the potatoes. No russet potatoes? No problem! Use yukon golds, red potatoes or whatever you have in your pantry.
- Cut the potatoes any way you like. I sliced the potatoes but you can cube them if you prefer. The key is to cut the potatoes into similar sized pieces for even cooking. If you cut thicker slices or cubes, you may need to increase the cooking time.
- Swap the sausage. I like beef smoked sausage, but feel free to use pork sausage, chicken sausage, keilbasa or even cubed ham.
- Use fresh peppers and onions. I find that frozen peppers and onions make this meal all the more convenient. If you have fresh peppers and onions, you can use them!
- Make it spicy. Add a pinch of red pepper flake or slice up a jalapeno to add a touch of heat.
- Sprinkle on the cheese. When you serve this up, you can add a bit of shredded cheese to each helping to really make this a comforting meal.
How to Make Smoked Sausage and Potato Bake
It’s really easy to make sausage with peppers and onions.
Ingredients You’ll Need:
- Olive Oil
- Beef Smoked Sausage
- Russet Potatoes
- Frozen Bell Peppers and Onions Mix
- Salt
- Black Pepper
- Garlic Powder
- Chicken Broth

How to Make It:

Brown the sausage. First, you’ll heat olive oil in a dutch oven and brown the slices of smoked sausage for 2-3 minutes on each side. Set aside on a plate.

Brown the potatoes. Next, you’ll add the potatoes and cook over medium heat turning until they are golden brown.

Add remaining ingredients. Last, you’ll stir in the peppers and onions and the seasonings. Pour the chicken broth over everything. Bake uncovered for 45 minutes and gently stir before serving.

Notes and Adaptations:
- Although I use beef smoked sausage, feel free to use whatever type of sausage you prefer–turkey sausage, kielbasa, andouille, etc.
- I use the frozen pepper and onion blend to save time, but you can certainly use freshly sliced produce if you prefer.

Recommended Equipment:
- Dutch oven or other oven-safe pot- I love my Le Creuset dutch oven, but there are definitely less expensive options that would work just fine.
Smoked Sausage and Potatoes

This hearty meal of smoked sausage and potatoes requires minimal effort, yet is so satisfying!
Ingredients
- 1/4 cup olive oil
- 12-oz beef smoked sausage, sliced into rounds
- 3 large russet potatoes, sliced (approx. 2 lbs)
- 3 cups frozen sliced bell peppers and onions mix
- 1 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1/2 cup chicken broth
Instructions
- Preheat the oven to 350F.
- Add olive oil to a Dutch oven on the stove top. Over medium heat, add sliced smoked sausage, flipping to cook for about 2-3 minutes on each side.
- Remove sausage to a plate and set aside.
- Add sliced potatoes to the Dutch oven, cooking over medium heat for a few minutes, turning occasionally, until they begin to turn golden-brown.
- Add peppers and onions to the pot, along with the salt, pepper, and garlic powder. Return the sausage to the pot, and pour the broth over everything. Give the mixture a stir to combine.
- Transfer the Dutch oven to the preheated oven and bake, uncovered, for about 45 minutes.
- Remove from oven and gently stir, then serve.
