I grew up in a time when slow cooked meals on the stove were the norm.
As I ventured out on my own, I adopted the slow cooker, and it was my go-to kitchen appliance for many years. The slow cooker saved me a ton of time in the evenings and ensured we all came home to a hot meal.
The only drawback was that using the slow cooker required a fair amount of advanced planning and a few extra minutes of prep work in the morning.
When the Instant Pot became available, I was intrigued. A kitchen appliance that seemingly embraced last-minute planning and still cooked a healthy and hot meal? Yes, please!
I started with my favorites and began to convert slow cooker recipes to pressure cooker recipes. My family was so pleased with my Instant Pot Chicken and Gravy that I knew I needed to try another classic favorite.
Well, we weren’t disappointed! My pressure cooker pork chops and gravy recipe was everything we hoped it would be––tender, flavorful, and best of all; dinner was ready in under an hour.

Choosing The Perfect Pork Chops
I have to admit, I don’t always love pork chops. They dry out easily and can turn rubbery fast, if they aren’t cooked just right. But this pressure cooker pork chops and gravy recipe yields the most tender pork chops you can imagine.
This recipe is similar to my seasoned-to-perfection Instant Pot pork chops, but with a rich and savory gravy.

Pork chops come in various cuts from thick to thin, bone-in and boneless. Choosing the right pork chops will make this a successful meal that your family loves.
Different cuts of pork chops have many other names that can vary depending on where you live. So when choosing pork chops for this recipe, I have three essential criteria.
- Are the pork chops thick? I prefer a thick cut pork chop for this recipe. Too thin and the pork will be practically shredded when it comes out.
- Are they boneless? I highly recommend that you use boneless pork chops. These will cook up so tender and you don’t want to be fishing pieces of bone out of the gravy.
- Are they affordable? If my goal was tender, grilled pork chops I would likely choose the highest quality. But the Instant Pot will do magical things as it cooks meat, so there is no shame in picking up the less expensive pork chops for this meal.
How to Make Instant Pot Pork Chops with Gravy
It’s really easy to make smothered pork chops in the Instant Pot.
Ingredients You’ll Need:
- Olive Oil
- Thick cut boneless pork chops
- Black Pepper
- Garlic Powder
- Low-sodium broth (chicken, beef, or vegetable)
- Ranch Dressing Mix
- Brown Gravy Mix
- Homemade Cream of Chicken Soup
- Optional: Cornstarch + Water
How to Make It:

Sear the chops. First, you’ll set the Instant Pot to saute and heat the oil. Season the pork and sear them for 2-3 minutes on each side. Transfer to a plate. You can do this in batches.
Add the seasoning and cook. Next, you’ll pour in the broth and scrape any browned bits from the bottom of the Instant Pot (this helps to prevent the burn error).
Return the pork chops to the Instant Pot and sprinkle on the dry ranch mix and the brown gravy mix.
After sprinkling the mixes in, stir it all a little so the dry mixes are moistened by the broth (they don’t have to be fully incorporated into the broth, you just don’t want clumps of dry mix).
Close the lid and seal it. Select a cook time of 15 minutes at high pressure followed by a natural pressure release.
Finish the Gravy. Last, you’ll remove the pork and stir in the cream of chicken soup. You can chop the pork into smaller pieces before adding back to the gravy and serving, or leave the chops whole.
Notes and Adaptations:
- If your gravy isn’t thick enough, you can whisk cornstarch and water together into a slurry, then add to the mixture in the Instant Pot and allow it to thicken for a few minutes. The gravy is thick enough for me without the cornstarch slurry, but you can add it if needed.
- I prefer to use homemade cream of chicken soup, because it adds so much flavor (and it’s super simple to make your own!). However, you can certainly use a can of cream of chicken soup (or cream of mushroom soup) whisked together with a can of water.
- You can pull the pork into chunks or leave the pork chops whole.
- I have not tested this recipe with thin-cut pork chops, but I’d recommend decreasing the cook time to 7 minutes if you need to use thin-cut chops.
- Low-sodium broth is recommended, as the seasoning packets tend to have quite a bit of sodium.

Instant Pot Pork Chops and Gravy
Tender, fall-apart pork chops with a savory gravy cook quickly in the Instant Pot, making a mouthwatering dinner the easy way!
Ingredients
- 2 TBSP olive oil
- 4-6 thick cut boneless pork chops
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 2 cups low-sodium broth (chicken, beef, or vegetable)
- 1 packet ranch dressing mix
- 1 packet brown gravy mix
- 2 cups homemade cream of chicken soup
- Optional: 2 TBSP cornstarch + 2 TBSP water
Instructions
- Add olive oil to the insert pot of the Instant Pot. Use the Saute button to heat the oil.
- Sprinkle black pepper and garlic powder over both sides of the pork chops, then add the chops to the hot oil (depending on the size of the pork chops, you may need to do this in two batches).
- Sear the sides of the pork chops, cooking on each side for about 2-3 minutes, then flipping to the other side just to brown them a bit. Repeat with remaining chops, if needed. Transfer to a plate and set aside.
- Add chicken broth to the insert pot, using a spatula to scrape up any browned bits from the bottom of the pot. Press Cancel to turn off the Saute function.
- Return the pork chops tot he broth. Sprinkle the dry ranch mix and brown gravy mix over the pork chops, stirring just enough to allow the seasoning to mix with the broth a bit.
- Close lid and set the vent to the sealed position. Select a cook time of 15 minutes at high pressure.
- Once the cook time is complete, allow a natural release of pressure (if you're in a hurry, you can do a 10 minute natural release followed by a quick release of remaining pressure).
- After the pressure has released and the valve has dropped, stir in the cream of chicken soup. If desired, remove the pork chops to a plate and pull apart into chunks, then return to the gravy.
- Optional: If your gravy isn't thick enough, you can whisk cornstarch and water together into a slurry, then add to the mixture in the Instant Pot and allow it to thicken for a few minutes.
