Easy Homemade Gluten Free Cream of Chicken Soup

You can make your own gluten free cream of chicken soup with just a few basic ingredients! No more cans, and no more gluten!

Our favorite comfort foods, casseroles, and holiday recipes often call for a can or two of condensed soup–usually a “cream of” soup.

Although I tend to love eating these dishes, I have to admit that the canned condensed soups gross me out. Between the congealed contents and the chunks hiding within, it just isn’t very appetizing.

Not only are condensed soups high in sodium, but I’m often left picking out the chunks of chicken, celery, or mushrooms because I don’t want those in my finished product.

That’s why I learned how to make my own homemade cream of chicken soup!

I use this stuff in so many dishes! Not only is it ridiculously easy to make, but it tastes so much better than the canned version!

But I know many of you are on the search to recreate your family-favorite recipes sans gluten. That’s why I decided to make a gluten free cream of chicken soup recipe for you!

How to Make Gluten Free Cream of Chicken Soup

Ingredients:

  • 1/4 cup unsalted butter
  • 2 Tbsp cornstarch
  • 1 1/2 cups chicken broth
  • 1/2 cup milk
  • 1/4 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp paprika
  • 1/4 tsp black pepper

Instructions:

To start, you’ll melt some butter in a stockpot or Dutch oven.

Next, you’ll sprinkle some cornstarch over the butter, whisking it well to form a pasty roux.

Slowly pour in some chicken broth and milk, whisking constantly to combine it so it’s smooth, not lumpy.

Add in the seasonings and let the soup simmer for a few minutes to thicken up.

Then, it’s ready to be added into your favorite recipe! You can also refrigerate it or freeze it for later.

Notes and Adaptations:

  • I purposely don’t include any chunks in my cream of chicken soup. If you want to add in some tidbits of chopped or shredded chicken, feel free!
  • I use chicken broth, but you can substitute vegetable broth if preferred. Just be sure your broth is gluten free as well.
  • This makes roughly 2 cups of cream of chicken soup, which is about what you’d get if you mixed one can of condensed soup with one can of water.
  • If your recipe requires an undiluted can of soup, you can either simmer the soup longer so that it thickens up a bit more, or decrease the amount of this homemade version that you add to your recipe.

        Hi Larisa! Yes, it can be frozen. But since cornstarch can become kind of gelatinous afterward it has been chilled, you may need to whisk in some broth or milk to thin it out a bit after thawing so it isn’t too clumpy. I hope that helps!
