Ritz Cracker Casserole With Rotisserie Chicken
Using rotisserie chicken is one of the easiest ways to make this Ritz cracker chicken casserole come together quickly.
Using rotisserie chicken saves time since the chicken is already cooked and easy to shred. It also adds a little extra flavor from that slow-roasted seasoning.
If you don’t have a rotisserie chicken on hand, you can still make this recipe with cooked and shredded chicken breasts.
Boiling or baking your own chicken works just fine, and you can keep the seasoning simple.
No matter which option you choose, you’ll still end up with a deliciously creamy chicken casserole with that irresistible Ritz cracker topping.

How to Make Creamy Chicken Casserole with Ritz Cracker Topping
It’s really easy to make this hearty casserole.
Ingredients You’ll Need
- Precooked Shredded Chicken
- Mayonnaise
- Sour Cream
- Cream Of Chicken Soup
- Chicken Broth
- Salt
- Black Pepper
- Garlic Powder
- Onion Powder
- Ritz Crackers
- Unsalted Butter
- Green Onions
How to Make It:

Prepare the chicken mixture. First, you’ll combine the mayonnaise, sour cream, cream of chicken soup, and chicken broth.
Mix in salt, pepper, garlic powder, and onion powder. Add shredded chicken, and stir well to ensure the chicken is properly coated with the sour cream mixture.

Layer the casserole. Then, you’ll spread chicken mixture into your prepared 9×13 casserole dish.
In a separate bowl, pour melted butter over the crushed Ritz crackers. Stir until all butter has been absorbed by the crackers.
Then, you’ll sprinkle the cracker mixture over the chicken base in an even layer.

Bake and serve. Bake for 25–30 minutes, or until the sauce is bubbly and the topping is a deep golden brown.
If desired, garnish with chopped green onions and serve on its own or over your carb of choice.

- Using a rotisserie chicken will save you lots of time, versus cooking and shredding chicken. It also adds a nice slow-roasted flavor. A rotisserie chicken typically yields 5-6 cups of meat, which is the perfect amount for this recipe. But you can certainly boil or bake chicken breasts and shred the chicken, if you prefer.
- For the best crunch, don’t pulverize the crackers into fine dust. Aim for pea-sized (or larger) coarse chunks to create those signature buttery nooks and crannies on top of the casserole.
