(Full printable recipe is available below)
Mix the ingredients. First, you’ll combine cake mix, eggs, oil, peanut butter, and vanilla extract in the bowl of a stand mixer fitted with the paddle attachment (or in a large mixing bowl with an electric hand mixer).
Blend the dough. Next, you’ll mix just until a soft dough forms, scraping down the sides of the bowl as needed
Roll into balls. Next, you’ll scoop dough out into small balls. If desired, roll each ball in sugar.
Criss-cross the dough. Next, you’ll place on a parchment paper lined baking sheet. Use the tines of a fork to create a criss-cross pattern on each cookie, pressing gently to flatten slightly.
Bake and serve. Last, you’ll bake for about 10 minutes of baking time, then remove cookie sheet from oven. Allow to cool on the baking sheet for a few minutes, then transfer cookies to a wire rack to cool completely.

Notes and Adaptations:
- Feel free to add mix-ins if you’d like, such as chocolate chips or chopped nuts.
- I prefer the flavor of yellow cake mix in this recipe, but you can use white cake mix if that’s what you have on hand.
- I find that these cookies are sweet enough as it is, but you could also add 1/4 cup of brown sugar if you want to deepen the sweetness a bit.
- Leftovers can be stored at room temperature in an airtight container.
- I have not tested this recipe with natural peanut butter (the kind that you have to refrigerate), so I’m not sure if that will work.
- Use this as the base recipe for making peanut butter blossoms with Hershey Kisses!
