If your kids are anything like mine, I’m guessing they will scarf down snacks at a rapid rate.
While I try to keep a good selection of “healthier” snacks on tap, sometimes we just need a little something sweet.
Brownies and cookies are a great way to satisfy a sweet tooth!
I have several favorite cookie recipes that we make often, like these soft and chewy chocolate chip cookies, bakery style oatmeal raisin cookies, quick and easy peanut butter chocolate chip cookies, molasses sugar cookies, and of course these amazing pumpkin snickerdoodles, apple butter snickerdoodles, and chocolate snickerdoodles.
Then there is my love for cookie bars, like these M&M cookie bars and these oatmeal cream pie cookie bars. Because you don’t even have to scoop, roll, or shape the dough! And of course, I’m a sucker for marbled cookie brownie bars!
And although I am a sucker for brownies made from scratch, I don’t always take the time to make them that way.
Sometimes, having a simple shortcut up your sleeve is the perfect way to enjoy a homemade treat without a lot of effort.
A few of the shortcut recipes I love is to make are strawberry Jello cookies, lime Jello cookies, Bisquick sugar cookies, chocolate chip cookies with Bisquick and Bisquick peanut butter cookies.
So I decided to try another super easy shortcut, which is to use a brownie mix to make cookies!
This is perfect for those days when you need a special treat to help reign in the day that’s going the wrong way!
Not only are these brownie mix cookies ridiculously easy, but they’re also endlessly customizable. You can make them plain or add your favorite mix-in. We love adding M&Ms, but you could chop up leftover holiday candy or add chocolate chips, nuts, chopped up Oreos, or whatever floats your boat!
The fun thing about using M&Ms is that you can make these for pretty much any holiday, simply by using festive M&Ms!
We recently did just that for Valentine’s, and–voila! Instant holiday dessert!
I use that same tactic when making M&M cookie bars–so fun to change it up depending on the time of year!
How to Make Cookies from Brownie Mix
If you can make brownies with a brownie mix, you can definitely make these cookies!
Ingredients You’ll Need:
- 18-oz package brownie mix
- 1 egg
- 1/2 cup butter, melted
- 1/4 cup all-purpose flour
- 2 Tbsp light corn syrup
- 1 cup M&Ms (optional; or other mix-in as desired)
Instructions:

Mix. You’ll start by mixing everything together except for the M&Ms. Those go in last! One secret ingredient I like to add is a little corn syrup, because it helps the cookies stay nice and chewy, with lightly crisp edges.
Once everything is mixed in, you can chill the dough if you want, but I haven’t found it to make much of a difference with these cookies, so I don’t do it!
Shape. I take a scant 1/3 cup of dough and roll it into a ball in my hands.
Then, I tear the ball in half, creating two halves that each have a jagged edge. Place those on a baking sheet with the jagged edge facing up.
Bake. You’ll bake them for just 8 minutes. The edges will be firmer and a tad crinkly, but the middles will be soft. This is exactly how you want them!
Cool. After they come out of the oven, you can add a few more M&Ms on top if you want. Then let them cool for about 5 minutes on the baking sheet before you transfer them to a cooling rack.
Easy peasy!
How to Store Brownie Cookies
I store these at room temperature in an airtight container.
They are best and softest the day they’re made, but they’ll still be delicious a few days after making them!

Brownie Mix Cookies
These cookies are made with brownie mix and M&Ms, making them a fun, festive, and super easy treat!
Ingredients
- 18-oz package of brownie mix
- 1 egg
- 1/2 cup butter, melted
- 1/4 cup all-purpose flour
- 2 Tbsp corn syrup
- 1 cup M&Ms (optional; or other mix-in of choice)
Instructions
- Preheat oven to 350F and line a baking sheet with parchment paper or a silicone mat.
- In a medium mixing bowl (or the bowl of a stand mixer), combine brownie mix, egg, melted butter, flour, and corn syrup. Mix until everything is well-combined.
- Add M&Ms or other mix-in, folding into the dough.
- Scoop out a scant 1/3 cup of dough and roll it between your hands, forming a ball. Tear the ball in half and place each half onto prepared baking sheet, with the jagged torn edge facing up.
- Bake for 8 minutes, until edges are beginning to turn crispy but centers are still soft. Remove from oven and allow to cool on the baking sheet for about 5 minutes, then transfer to a cooling rack to cool completely.
Notes
Feel free to use whatever mix-in you'd like! Different colors of M&Ms are fun, or chopped Oreos, chocolate chips, nuts, chopped candy, etc. are all options!
