Growing up, my family mostly ate soup from a can.
However, my mom had a handful of soup recipes she would make from scratch, and they were always so good.
One of my favorites was her vegetable beef soup! It was an easy way to use up leftover vegetables and roast beef and feed the family a tasty meal.
Although it is super easy to make soup with leftovers, I wanted to recreate a beef vegetable soup that I could make at any time, even if I didn’t have leftover roast beef on hand.
This easy hamburger soup with vegetables is a perfect way to enjoy the flavors of homemade soup with just a few basic ingredients!

Hamburger Vegetable Soup
This hamburger soup is chock full of ground beef, tender potatoes and vegetables!
It’s a very easily-adapted recipe, so you can use what you have in your fridge or freezer. If you don’t have beef broth or vegetable broth, feel free to use chicken broth!
You can swap out veggies, leave out the potatoes, add in some pasta noodles, or whatever you prefer!
My mom often added cabbage to her vegetable beef soup, which I loved. My husband doesn’t care for cabbage, so I usually leave it out these days, but I think it would be a fabulous addition!
Many people love hamburger soup because it is Whole30 compliant, which means its’ an easy meal to make ahead when you’re on a strict eating plan.

What to Serve with Ground Beef Vegetable Soup
I really love serving this hamburger potato soup with some fresh bread. You can pick up a baguette from the grocery store or, even better, make some homemade dinner rolls or Instant Pot bread!
If you don’t have time to make fresh bread, you could also serve it with some grilled cheese sandwiches.
You could also add a side salad to round things out a bit!
Can You Freeze Leftover Hamburger Potato Soup
The leftovers of this soup do freeze nicely! Just transfer the leftovers to a freezer safe container and save it for another day.
If you aren’t freezing the leftovers but still want to reheat a smaller portion for lunch the next day, you may want to try reheating the soup in the Instant Pot!
How to Make Hamburger Soup with Noodles
If you don’t need a Whole30 compliant soup and want to add some pasta to your soup, feel free to do so! Macaroni, ditalini, or small shells would be great options.
I’d recommend adding 1/2 cup of small noodles to the soup. You may want to add a little extra liquid, too (about a cup) to keep the soup from being too thick.
Easy Hamburger Soup Recipe

Ingredients:
- 1 lb ground beef
- 1/2 onion, diced
- 2 ribs of celery, sliced
- 2 cloves of garlic, minced
- 14.5-oz can of diced tomatoes
- 2 cups of beef or vegetable broth
- 2 bell peppers, diced
- 2 whole carrots, sliced
- 2 large russet potatoes, cubed
- 1 Tbs tomato paste
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 tsp dried basil
- 1/4 tsp dried oregano
Instructions:

In a stockpot or Dutch oven, add ground beef, diced onion, and celery over medium-high heat. Break up the ground beef as it cooks.
Once the beef is browned and the onions are translucent, drain off any extra grease (you don’t want the soup to be oily!).
Add in the garlic, stirring for just a minute to allow it to heat up and become fragrant.
Next, stir in the remaining ingredients. Bring the contents to a boil, then reduce the heat to a simmer.
Simmer, partially covered, until the potatoes are tender, about 20 minutes.

Easy Hamburger Soup with Vegetables
This hearty hamburger soup with vegetables is an easy way to use frugal ingredients to make a delicious meal!
Ingredients
- 1 lb ground beef
- 1/2 onion, diced
- 2 ribs of celery, sliced
- 2 cloves of garlic, minced
- 14.5-oz can of diced tomatoes
- 2 cups of beef or vegetable broth
- 2 bell peppers, diced
- 2 whole carrots, sliced
- 2 large russet potatoes, cubed
- 1 Tbs tomato paste
- 1/4 tsp salt

- In a Dutch oven or stockpot, combine ground beef, diced onion, and celery over medium-high heat.
- Cook for a few minutes, breaking apart the beef, until the beef is browned and the onions are translucent.
- Drain any excess grease to prevent soup from being oily.
- Return beef, onions, and celery to pot. Add garlic, stirring for a minute until it become fragrant.
- Add remaining ingredients and stir to combine.
- Bring to a boil, then reduce heat to a simmer. Cook until potatoes are tender, about 20 minutes.
Notes
If you'd like to add noodles to the soup, feel free to do so! Macaroni, ditalini, or small shells would be great pasta options. You may also want to add an extra cup of liquid along with the noodles.
You can add cabbage to this soup as well, or change out the vegetables to suit your preferences.
