Easy Soft & Chewy Churro Bars
Making churro blondies is an easy way to whip up a dessert that everyone loves. The sweet, chewy bars topped with a crunchy cinnamon sugar topping are always a hit!

My first introduction to churros was at Disney World as a child, and it was a memorable one.
The chewy interior texture paired with the crispy fried exterior, complete with a dusting of cinnamon sugar meant that they were one of my favorite vacation treats.
Add in some chocolate sauce for dipping, and I was sold!
They’re still one of my favorite snacks to enjoy at Disney World, but now I can enjoy the iconic flavors at home, too, thanks to these easy churro bars.
There’s just something about cinnamon-sugar desserts that feels comforting, and they’re usually a hit with guests. They’re not as decadent as a rich, chocolate dessert, but are indulgent enough to satisfy a sweet tooth.
And dessert bars are a super low-maintenance dessert, because they can be enjoyed on their own, or you can dress them up with a drizzle of chocolate sauce or vanilla ice cream (or both!).

Making Churro Blondie Bars
These churro bars are moist and chewy, rather than cake-like. Their consistency is similar to that of a brownie or a blondie.
The soft cookie bars can be served warm or cold, but just like brownies, they’re easier to slice if you let them cool first.
I think they’re special enough to serve for a holiday dessert this Thanksgiving or Christmas, thanks to their sparkly cinnamon-sugar topping, or you can add them to your Cinco de Mayo menu in the spring.

How to Make Churro Cookie Bars
It’s really easy to make this simple dessert.
Ingredients You’ll Need
- Salted Butter
- Light Brown Sugar
- Granulated Sugar
- Eggs
- Vanilla Extract
- Baking Powder
- Baking Soda
- All-Purpose Flour
- Ground Cinnamon

How to Make It:

Make the topping. First, you’ll combine the cinnamon and sugar in a small bowl, mixing well. Set it aside.
Start the batter. Next, you’ll combine melted butter, brown sugar, and granulated sugar in a mixing bowl, stirring or whisking until combined well.
Add in the eggs and vanilla, whisking well until incorporated.
Then, you’ll add in the flour, baking powder, baking soda, and cinnamon, stirring just until combined.

Bake. Spread the batter into a 9×13” pan, then sprinkle the top with the cinnamon-sugar mixture.
If needed, give the pan a little shake from side to side to get the topping to spread out evenly, then bake for 25-30 minutes, or until the top no longer jiggles.

Let the bars cool in the pan for at least a few minutes before slicing, if you want to serve them warm. Otherwise, let them cool completely before slicing to get neater cuts.

- Leftover churro bars can be stored in an airtight container at room temperature for up to 3-5 days.
- Serve the cookie bars plain or add some chocolate sauce for dipping or drizzling, or serve with a scoop of vanilla bean ice cream and a drizzle of caramel sauce.

Ingredients
For the Bars:
- ½ cup salted butter (melted)
- 1 ½ cups light brown sugar
- ½ cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 2 cups all-purpose flour
- 1 tablespoon ground cinnamon
For the Topping:
- 1/4 cup granulated sugar
- 1 1/2 teaspoons ground cinnamon
Instructions
- Preheat the oven to 350°F. Spray a 9×13″ baking pan with nonstick spray and set aside.
- In a large mixing bowl, combine the melted butter, brown sugar, and granulated sugar. Whisk or stir until well-combined.
- Add the eggs and vanilla extract. Whisk until the eggs are thoroughly incorporated into the mixture.
- Gently whisk the baking powder, baking soda, flour, and cinnamon into the wet ingredients until the wet and dry ingredients are fully combined.
- Spread batter evenly into prepared baking pan.
- Prepare cinnamon sugar topping by whisking the cinnamon and sugar together in a small bowl. Sprinkle the cinnamon sugar mixture over the top of the batter.
- Bake for 25-30 minutes, or until the top no longer jiggles. If serving warm, let the bars cool in the pan for a few minutes before slicing. Otherwise, let cool completely.
Notes
- You can slice the bars while warm if desired, but letting them cool will make it easier to get clean cuts with smooth, even edges.
- I like to sprinkle the cinnamon sugar mixture onto the bars and then shake the pan back and forth to spread it out more evenly. You can then dump any excess cinnamon sugar to the sink. The bulk of it will stick to the batter and give you that nice crunchy top.
