Fresh apples are always abundant this time of year, and I always look forward to making a big batch of Instant Pot apple butter or slow cooker apple butter.
If you ever find yourself with leftover apple butter, don’t worry—there are so many ways to use it!
Of course, it’s delicious on its own, but it also makes a fantastic topping for pancakes or waffles.
It can be swirled into yogurt, or even as a glaze for roasted meats.
But what I love most is how it transforms simple baked goods into something special.
These apple butter muffins are a prime example of that magic—where a spoonful of apple butter elevates a humble muffin into the perfect autumnal treat.

How to Make this Easy Recipe for Apple Butter Muffins
It’s really easy to make these simple muffins!
Ingredients You’ll Need:
- Vegetable Oil
- Granulated Sugar
- Light Brown Sugar
- Eggs
- Vanilla Extract
- Sour Cream
- Apple Butter
- All-Purpose Flour
- Baking Powder
- Baking Soda
- Salt
- Ground Cinnamon
- Ground Nutmeg
How to Make It:

Mix the wet ingredients. First, you’ll beat the vegetable oil, sugar and brown sugar with an electric mixer on medium speed until combined.
Mix in the eggs and vanilla until just incorporated.
Add the dry ingredients. Next, you’ll add apple butter and sour cream, followed by flour, baking powder, baking soda, salt, ground cinnamon, and nutmeg.
With the mixer on low speed, mix just until the dry ingredients are incorporated into the batter.
Bake the muffins. Last, you’ll divide the batter between the wells of the muffin pans, filing each about 1/2-2/3 full. I use a cookie scoop to portion the batter.
Bake for 18-20 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
Notes and Adaptations:
- Leftover muffins can be stored in an airtight container at room temperature for 3-4 days. You can also freeze the muffins, if preferred! Simply wrap each cooled muffin with plastic wrap, then place them in a freezer-safe container.

Ingredients
- 2/3 cup vegetable oil
- 1/2 cup granulated sugar
- 1/4 cup light brown sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1/4 cup sour cream
- 1 cup apple butter
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
Instructions
- Preheat oven to 350F. Grease 18 wells of muffin pans or line with muffin cups.
- In the bowl of a stand mixer fitted with the paddle attachment (or in a large mixing bowl with a handheld electric mixer), combine vegetable oil, granulated sugar, and brown sugar. Mix on medium speed until combined.
- Add eggs and vanilla extract, mixing just until incorporated.
- Add apple butter and sour cream, mixing until combined.
- Add flour, baking powder, baking soda, salt, ground cinnamon, and nutmeg to the wet ingredients. With the mixer on low speed, mix just until the dry ingredients are incorporated into the batter.
