How to Make Sugar Free Chocolate Peanut Clusters

It’s really easy to make this healthier treat.

Ingredients You’ll Need

  • Sugar-Free Chocolate Chips or Melting Wafers
  • Roasted Salted Peanuts (Shelled)
  • Sprinkles for Decoration (Optional)

How to Make It:

Melt the chocolate. First, you’ll add sugar-free chocolate chips to a microwave-safe mixing bowl. Microwave for 30 seconds, then stir well.

Continue microwaving in 15-second increments, stirring after each, until chocolate is fully melted.

Stir in the peanuts. Next, you’ll add peanuts to the chocolate mixture, stirring well to coat.

Shape the candy. Last, you’ll scoop out rounded tablespoons of chocolate-covered peanuts onto the prepared baking sheet.

If desired, sprinkle the clusters with festive sprinkles or sanding sugar before the chocolate hardens.

Transfer the baking sheet to the refrigerator and let chill to allow the chocolate to cool and harden completely before serving. 

Notes and Adaptations

  • The use of sprinkles is optional. It can be difficult to find sugar-free sprinkles, but using regular sprinkles in small amounts will not greatly alter the sugar content (1 tablespoon of non-pareil sprinkles averages about 3-4 grams of sugar).
  • I get about 12 peanut clusters from this recipe. Feel free to double it if you’d like to have more!
  • Store leftovers in an airtight container at room temperature or in the refrigerator.

Ingredients
 

  • 1 1/2 cups sugar-free chocolate melting wafers or chips
  • 1 cup roasted salted peanuts (shelled)
  • 1 tablespoon sprinkles for decoration (optional)

Instructions

  • Line a baking sheet with wax paper.
  • Add sugar-free chocolate melting wafers or chips to a microwave-safe mixing bowl. Microwave for 30 seconds, then stir well. Continue microwaving in 15-second increments, stirring after each, until chocolate is fully melted.
  • Add peanuts to the chocolate mixture, stirring well to coat.
  • Scoop out rounded tablespoons of chocolate-covered peanuts onto the prepared baking sheet.
  • If desired, sprinkle the clusters with festive sprinkles or sanding sugar before the chocolate hardens.
  • Transfer the baking sheet to the refrigerator and let chill to allow the chocolate to cool and harden completely before serving. You can also let them cool and harden at room temperature, it will just take a little longer.
