Every now and then, I get a craving for a special breakfast treat other than cereal or oatmeal.
I love making homemade biscuits, especially when they’re dotted with some fresh blueberries and topped with sweet icing!
My fascination with making some of my favorite breakfast foods at home began many years ago when I was still in college.
Trips from Tennessee to Florida to visit my family almost always began with an early morning trip through the drive-thru.
As I got older, I ate fast food less and began to seek ways to make some of my favorites at home, like my homemade breakfast sandwiches.
Cooking at home is almost always healthier; it will save you money and the recipes are usually just as good or better than you can get at the drive-thru.
These homemade biscuits are inspired by Bojangles blueberry biscuits with sweet icing. Eating blueberry biscuits is a full sensory experience, and they taste even better than they look and smell.
There is nothing wrong with traditional breakfast biscuits, but everything is right with these copycat Bo-Berry Biscuits made with fresh blueberries.
Enjoy them on their own, or serve them alongside sausage and eggs.

Enjoy Biscuits Made with Fresh Blueberries at Home
Fast food is convenient but can be expensive and not very healthy. Boxed mixes can sometimes offer lackluster results and honestly, all you need is a few simple ingredients to make Bojangles blueberry biscuits at home.
And if you love Pillsbury blueberry biscuits, you’re going to be over the moon for these!
The secret is nothing more than a few ingredients from your pantry, fresh blueberries and a little time.
Best of all, you can enjoy these blueberry biscuits at home in your jammies with your messy bed hair and holey slippers on your feet!
How to Make Copycat Bo-Berry Biscuits
It’s really easy to make flavorful blueberry biscuits at home.
Ingredients You’ll Need:
For the Biscuits:

- Sugar
- Baking powder
- Salt
- Unsalted butter
- Milk
- Fresh blueberries
For the Glaze:
- Powdered Sugar
- Milk
- Vanilla extract
How to Make It:
(Full printable recipe is available below)
Make the dough. First, you’ll combine the dry ingredients and cut in the butter. Then stir in the milk to form a dough and gently fold in the blueberries.

Cut the Biscuits. Next, you’ll roll out the dough on a floured surface and use a biscuit cutter to form the biscuits. Place them on a cookie sheet and bake 13-15 minutes until golden brown.

Make the glaze. Last, you’ll whisk together powdered sugar, milk and vanilla to make a glaze. Allow the biscuits to cool slightly, then drizzle with the glaze and serve.

Notes and Adaptations:
- I have only made these with fresh blueberries, but I suspect frozen blueberries will work fine if that’s what you have on hand (I’d leave them frozen instead of thawing them).
- The number of biscuits you end up with will depend on the size of your cutter.

Homemade Blueberry Biscuits

These blueberry biscuits are even better than Pillsbury and Bojangles--Plus they're easy to make!
Ingredients
- For the Biscuits:
- 2 - 2 1/4 cups all-purpose flour, divided
- 1 TBSP sugar
- 1 TBSP baking powder
- 1 tsp salt
- 5 TBSP unsalted butter, cold
- 1 cup milk
- 1 cup fresh blueberries, washed and dried
- For the Glaze:
- 1/2 cup powdered sugar
- 1-2 TBSP milk
- 1/4 tsp vanilla extract
Instructions
- Preheat oven to 425F and line a baking sheet with parchment paper or a silicone baking mat.
- In a large mixing bowl, whisk together 2 cups of flour, sugar, baking powder, and salt.
- Use a box grater to grate the butter (or you can cut into small pieces). Add butter to the dry ingredients and use a pastry blender or two forks to cut the butter into the flour.
- Add milk, stirring to combine.
- If your dough is too wet and sticky to handle at this point, add 1/4 cup more flour and stir to combine. Gently fold in the blueberries.
- Turn dough out onto a lightly floured surface. Roll dough to 1-inch thickness. Use biscuit cutters to cut dough into rounds. Re-roll any scraps and cut again.
- Place biscuit rounds onto prepared baking sheet and bake for 13-15 minutes until golden-brown.
- While the biscuits bake, prepare the glaze by whisking together powdered sugar, milk, and vanilla extract (start with 1 TBSP milk and add a second TBSP if needed).
- Allow biscuits to cool for about 5 minutes, then drizzle the warm biscuits with glaze and serve.
Notes
- I have only made these with fresh blueberries, but I suspect frozen blueberries will work fine if that's what you have on hand.
- The number of biscuits you end up with will depend on the size of your cutter.
