Whenever I travel anywhere, it’s a bit of a tradition for me to get a breakfast sandwich from a fast food joint. I started this tradition in college, when I would make the long trek from Tennessee to Florida to visit my family. Because I love a good breakfast sandwich. So grabbing one to-go was sort of a way to treat myself and get on the road earlier in the morning.
Nowadays, I very rarely eat a fast food breakfast unless I’m traveling. But you know what? I still love a good breakfast sandwich.
So I wanted to find a healthier and less expensive way to make my own breakfast sandwiches at home. One of the trickiest things for me was making eggs that would fit on the biscuit or bagel.
My husband, who rarely cooks, actually taught me a crazy easy kitchen hack (I think he learned it in his college days!) for making scrambled eggs that fit perfectly on your bread of choice. It’s so simple, yet works so well!
How to Make a Frugal Breakfast Sandwich at Home
You simply crack an egg into a small bowl or soup mug. You want your chosen bowl to have a bottom similar in size to the bread you’re using. If your bread is pretty small, like a smaller biscuit, you might need to use a coffee mug or something like that, but the small bowl works great for me.
Add a splash of milk to the egg and use a whisk or fork to “scramble” the egg and milk together. Place this in a microwave and cover it with a paper towel. Cook on high for one minute.
Carefully remove the bowl from the microwave and, voila! You’ve got a perfect scrambled egg circle that you can easily add to a piece of toast, bagel, or biscuit.
I like to toast up a bagel, put the eggs on and top with a piece of cheese. Super simple!
You can obviously add meat if you want–a piece of ham, sausage, or bacon would be yummy (you can cook sausage from frozen if needed). You can get creative and add sliced avocado or tomato, too.
However you like it, once it’s assembled, you can wrap it in a piece of waxed paper or parchment and take it on the go, or enjoy it at home.

Inexpensive Breakfast Sandwich
This inexpensive breakfast sandwich is a quick and easy way to enjoy a tasty, on-the-go breakfast without the expense or calories of a fast food drive through!
Ingredients
- 1 egg
- 1 Tbs milk
- 1 Bagel (or other bread of choice)
- 1 Slice of cheese
- Optional: Additional toppings as desired
Instructions
- Combine egg and milk in a small bowl or soup mug. Whisk together.
- Cover with a paper towel and heat in the microwave on high power for 1 minute.
- Carefully remove egg from soup bowl and place on bread of choice. Top with cheese and any other toppings you desire.
Notes
- Feel free to add any toppings you desire: bacon, sausage, ham, tomato, avocado...whatever floats your boat!)
- I like using a bagel, but you can also use a biscuit, toast, or your bread of choice.
