Coffee Cake Made with Fresh Pears

It’s no secret that I love baking with pears because they add both flavor and moisture to baked goods.

Using fresh pears in a pear coffee cake makes a delicious difference!

They have a naturally soft texture that bakes up beautifully, adding just the right amount of moisture without making the cake soggy.

Plus, fresh pears bring a delicate natural sweetness that I love.

How to Make Pear Coffee Cake

It’s really easy to make this simple breakfast treat.

Ingredients You’ll Need

For the Cake:

  • Unsalted Butter
  • Sugar
  • Brown Sugar
  • Eggs
  • Vanilla Extract
  • Self-Rising Flour
  • Whole or 2% Milk

For the Filling:

  • Diced, Peeled Pears

For the Topping:

  • Chopped Pecans
  • Brown Sugar
  • Self-Rising Flour
  • Ground Cinnamon
  • Butter

How to Make It:

Cream butter and sugar. First, you’ll combine butter, sugar, and brown sugar. Beat until well-combined.

Add eggs and flour. Next, you’ll add eggs and vanilla extract, mixing to incorporate, scraping down the sides of the bowl as needed.

Then, you’ll add flour to the bowl, mixing on low speed just until combined.

Add milk. Add the milk, mixing on low speed until incorporated. Set aside.

Prepare the streusel. Next, you’ll prepare streusel by combining pecans, brown sugar, flour, ground cinnamon, and butter in the bowl of a food processor.

Pulse until the mixture is the consistency of coarse crumbs.

Prepare for baking. Next, you’ll spread half of the batter into prepared pan. Top batter with half of the streusel, followed by diced pears.

Add remaining batter on top of the pears, followed by the remaining streusel.

Bake and serve. Last, you’ll bake in preheated oven for 45 minutes, or until a toothpick inserted in the center comes out clean.

Let cool for a few minutes before slicing and serving warm.

Streusel-topped pear coffee cake is a great way to enjoy the natural sweetness of pears for breakfast!

Ingredients
 

For the Cake:

  • 1/2 cup unsalted butter softened
  • 1/2 cup sugar
  • 1/3 cup brown sugar
  • 2 eggs
  • 1/2 teaspoon vanilla extract
  • 1 1/3 cup self-rising flour
  • 1/3 cup whole or 2% milk

For the Filling:

  • 3/4-1 cup diced peeled pears (one large pear)

For the Topping:

  • 1/3 cup chopped pecans
  • 2 tablespoons brown sugar
  • 1/3 cup self-rising flour
  • 1/2 teaspoon ground cinnamon
  • 4 tablespoons butter cold

Instructions

  • Preheat oven to 350F and grease an 8×8" baking dish.
  • In the bowl of a stand mixer fitted with the paddle attachment (or a large mixing bowl with an electric hand mixer), combine butter, sugar, and brown sugar. Beat until light and fluffy.
  • Add eggs and vanilla extract, mixing to incorporate, scraping down the sides of the bowl as needed.
  • Add flour to the bowl, mixing on low speed just until combined.
  • Add milk, mixing on low speed until incorporated. Set aside.
  • Prepare streusel by combining pecans, brown sugar, flour, ground cinnamon, and butter in the bowl of a food processor. Pulse until the mixture is the consistency of coarse crumbs.
  • Spread half of the batter into prepared pan. Top batter with half of the streusel, followed by diced pears. Add remaining batter on top of the pears, followed by the remaining streusel.

  • I haven't tried using canned pears for this recipe, but if you want to use canned instead of fresh pears, make sure they are well-drained.
