I am always on the hunt for easy Instant Pot chicken dinner recipes, and this Instant Pot Bourbon Chicken hits the mark.
My Instant Pot Sweet and Sour Chicken is one of my favorites recipes because it’s so easy to make and tastes amazing. Then there’s Instant Pot pepper steak, which is hearty and delicious.
Since I love Asian-inspired Instant Pot dishes, I am always working on recipes that are simple yet flavorful and have that Asian flavor that I love so much.
When I was in college, I worked part-time at a shoe store in the mall for four years. And although my college student budget didn’t always allow me to spring for it, the bourbon chicken from the mall food court was always a welcome treat.
Recreating this easy bourbon chicken recipe for the Instant Pot was like a blast from the past.
If you’ve been hesitant to make your favorite Asian dishes at home, don’t be. Soy sauce gives this Instant Pot bourbon chicken the flavor you love, and you probably have a bottle in your fridge as we speak.
No exotic ingredients or cooking appliances are required!

Origin of Bourbon Chicken
Head to your favorite Asian restaurant or the food court at your local mall, and you are likely to find Bourbon Chicken on the menu along with other favorite Asian-style dishes.
But surprisingly (or perhaps not), Bourbon Chicken, along with many other “Asian” favorites, originated right here in the good ole US of A!
Bourbon chicken was first made in the New Orleans historic French Quarter on famous Bourbon Street. The location, along with the use of bourbon in the recipe, led to this aptly named dish.
The Chinese chef who developed the dish borrowed from both Asian and Cajun cultures, thus creating a fabulous fusion of flavors that make Instant Pot Bourbon Chicken an instant hit.
How to Make Pressure Cooker Bourbon Chicken
It’s really easy to make this Instant Pot bourbon chicken recipe.
Ingredients You’ll Need:
- Boneless skinless chicken thighs
- Olive oil
- Soy sauce
- Honey
- Bourbon
- Barbecue sauce
- Minced garlic
- Cornstarch + water
- Sliced green onions for garnish (optional)

How to Make It:

Dump and cook. First, you’ll add the cubed chicken thighs to the Instant Pot. Whisk the olive oil, soy sauce, honey, bourbon, barbecue sauce, and minced garlic and pour it over the chicken—seal and cook at high pressure for 4 minutes, followed by a natural release of pressure.

Thicken the sauce. Next, you’ll whisk together the cornstarch and water and add it to the cooked chicken. Stir to thicken.

Serve. Last, you’ll serve over a bed of rice and garnish with chopped green onions if desired.

Notes and Adaptations:
- If you would like to cook the white rice in the Instant Pot at the same time as the chicken, you can! Before cooking, simply combine 1 cup of white rice with 1 1/4 cup water and 1/4 tsp salt in a pan that will fit in your Instant Pot (I use this small bundt pan). Place your trivet on top of the chicken and sauce mixture in the insert pot and set the pan on top of the trivet. Proceed with the cooking instructions as written.
Recommended Equipment:
- Instant Pot or other electric pressure cooker
- Bundt pan that fits in your Instant Pot (if you want to cook the rice at the same time as the chicken)
Instant Pot Bourbon Chicken

This Instant Pot Bourbon chicken is even better than everyone's favorite takeout version from the mall!
Ingredients
- 2 lbs boneless skinless chicken thighs, cut into 1-inch pieces
- 1 Tbsp olive oil
- 1/4 cup soy sauce
- 1/4 cup honey
- 1/3 cup bourbon
- 3 TBSP barbecue sauce
- 2 TBSP minced garlic
- 1 1/2 TBSP cornstarch + 1 1/2 TBSP water
- Optional: Sliced green onions for garnish
Instructions
- Add chicken pieces to the insert pot of the Instant Pot.
- In a small bowl, whisk together olive oil, soy sauce, honey, bourbon, barbecue sauce, and minced garlic. Pour over the chicken.
- Close the lid and set the vent to the sealed position. Select a cook time of 4 minutes at high pressure.
- Once the cook time is complete, allow a natural release of pressure. After the pressure has released, carefully remove the lid.
- Whisk together cornstarch and water to create a slurry. Stir the slurry into the sauce, allowing it to thicken.
- Serve over rice, garnishing with sliced green onions if desired.
Notes
