When Christmas morning rolls around in our house, there’s lots of excitement as our kids can’t wait to open their gifts and see what fun awaits under the tree.

That means I definitely don’t have time to spend puttering around in the kitchen, making an elaborate breakfast for everyone.

But I do enjoy making something that feels a little special on a holiday morning–something festive and delicious, but easy to whip up.

That’s where these Bisquick gingerbread donut holes come in!

They’re actually little mini muffins, but they bake up nice and round, complete with the traditional depth of flavor from molasses and warm spices.

Moist and tender, the donut bites are rolled in melted butter and a cinnamon sugar mixture, which makes them taste like baked cake donut bites.

I use a similar technique with my popular Bisquick pumpkin donut holes, which have always been a hit in our home, so this gingerbread version was a shoo-in!

Easy Gingerbread Doughnut Bites

Although these little sweets are technically mini muffins, it’s just more fun to call them donut bites, since that’s what they taste like!

And since they’re baked, you don’t have to worry about the mess (and smell) that comes with frying them in oil.

Plus, using Bisquick baking mix is such an easy shortcut! I always keep a box in my pantry, because there are just so many recipes to make with Bisquick.

I’m all about saving time on Christmas morning, so I can enjoy more time with my family!

Scoop and bake. Then, you’ll scoop the batter into a prepared mini muffin pan (I use a cookie scoop for this).

Bake until a toothpick inserted in the center of the donut holes comes out clean.

Roll the donut holes. Then, you’ll roll the warm donut bites in melted butter, followed by cinnamon-sugar.

This gives them their sweet coating that makes them more like donuts, so don’t skip this step.

Now, they’re ready to serve and enjoy!

Notes and Adaptations:

  • I use unsulphured molasses, such as Grandma’s brand. Avoid using blackstrap molasses.
  • Leftover donut holes can be stored in an airtight container at room temperature for a couple of days.
  • Don’t have a mini muffin pan? Make these in a regular muffin pan instead. It should yield about 12 regular-size muffins. You’ll just need to increase the baking time–typically around 17-19 minutes.

Ingredients

  • 2 cups Bisquick baking mix

  • 1/4 cup unsulphured molasses (such as Grandma's brand)

For Rolling Donut Holes:

  • 1/2 cup butter (melted)
  • 1/2 cup sugar
  • 1 teaspoon ground cinnamon

Instructions

  • Preheat oven to 400F and spray a 24-well mini muffin pan with nonstick spray. Set aside.
